I can think of quite a few themes that might be good depending on your interests and, to an extent, on your budget. If any of these spark any interest I can flesh them out for you.

1) Paris and the Movie Musical.

Gigi, An American in Paris, Funny Face and Les Miserables are all set in Paris. Take a different musical and center each day's activities on its scenes.

2) Paris and the Lost Generation

In the interwar period, Paris was home to a brilliant community of British and American expatriates. Visit the haunts of F. Scott Fitzgerald. Relate your sightseeing to places described by Hemingway in "A movable Feast."

3) Paris and the history of Art.

See four art museums in chronological order from Cluny to the Louvre to the Musee D'orsay to the Centre Pompidu and relate your evening entertainment to the time periods covered.

4) A Philosopher's Paris

From Voltaire and Diderot thru Bergson and Sartre, Paris has been a center of philosophy. Voltaire's favorite cafe is still open in the same spot. Sartre held forth at the Cafe de Deux Magots. Many more repose in various churches and cemeteries around Paris.

Moulin Rouge would be an excellent theme. If you haven't seen the movie with Nicole Kidman and Ewan McGregor, that would be a good start. You could visit places like the Moulin Rouge and watch the ladies do the can can. You could visit the Louvre and view some paintings by Toulouse Lautrec, who featured Moulin Rouge in a lot of his paintings. You could have a romantic dinner in a cabaret setting and even buy some caberet type lingerie for your wife as a present. You could do a tour of Monmartre, visit Sacre Coeur and take a romantic bateux mouche ride on the Seine.

You are taking her to Paris. Paris is a theme of romance and art and good wine. Does she like art then do the arty thing taking in the art museums if she like wine then u do the wine root get the picture now. If she love romans then do Paris at night.

paris is the city of love, so that can be the theme... pull out all the stops and take her breath away.. romance is always a good idea and she'll love you all the more... the day of the trip make her breakfast in bed with rose petals to kick it off right, take her to all the great romantic sites and surprise her with little stuff that means alot to women. good luck!

You could try to use Victor Hugo as a guide and look at thing regarding the action of some of his books :
his home (6 place des vosges)
Les miserables: visit the sewers, some quarters, le louvres
Notre Dame de Paris: ditto, ile de la cité, bateau mouches
Napolean le petit: les invalides, Etc...

You could even read the books or see the plays before to go.

Paris itself is a theme. Romance, culture, delicious food and wine...what more do you want? See the Tour Eiffel, the Louvre, the Pompidou, the Champs Elysses and go shopping!
