Here's a recipe that's relatively quick, easy, and impressive if done properly. It takes only 30-40 minutes, most of that just keeping an eye on pots.
Penne alla vodka (the alcohol cooks out so no worries for the kids)
500 grams of penne (about 1lb.)
3 cans of cut tomatoes
olive oil
1-2Tbsp butter (optional)
minced garlic
red pepper flakes
small carton of cream (you need about 100 mL)
75 mL of vodka (3 oz. )
salt to taste
(1/2-3/4 cup)parmasan cheese
Start water to boil for the penne
Put olive in a sauce pan - enough to coat most of the bottom. Add the minced garlic and saute a bit. Next add the cut tomatoes. Bring to a boil.
Next add maybe a tsp of salt and a bit of red pepper flakes. Add the vodka, turn on low heat, and let cook for 10 minutes.
Add the penne to the water.
After 10 minutes add the cream and butter. Instead of butter you can use olive oil. Mix well and add more salt or red pepper to your liking.
Drain the pasta and add little by little to the sauce. Let it cook together a little bit more to allow the sauce to stick to the pasta. Mix in some parmasan cheese and serve.

Chicken casserole..If you have a crock pot, cook the chicken in it until very tender. (about 6 chicken breasts) Fix 2 boxes stovetop stuffing(chicken flavor) according to box directions. Pour the stuffing into a 9x13 inch baking pan. Crumble the cooked chicken over the dressing. Pour 1 large(or 2 small) can of cream of chicken soup over the chicken. Sprinkle shredded cheddar cheese onto the top. Bake in 350 degree oven until cheese starts to brown. Yum Yum

Do you have a barbecue? Barbecue anything - yum! If not, stir fry is easy and delicious. For dessert - rice krispy treats are simple and don't require baking. If you're barbecuing, smore's are always good.
