I just saw someone saying you boil potatoes first and then oven. I don't agree, because the vitamins the potatoe has is all gone...
here is very very very nice one: my own:
cut potatoes chuncky way. Not too small not too big
put in a deep pirex
cut very small garlic and surround all over the potatoes.
put salt and pepper all over it
put sunflower oil all around it to make sure all potatoes are dancing in the oil and happy...
then put chicken cub (small chicken taste/vegetable cubes) - all around it (try to grade it all around the potatoes after the olive oil has been put)
Put in the oven. degree 160 so it won't burn. Let it cook.
Go time to time and see if it has become black, you can turn each potatoe the other side. If you like also you can put some lemon on them.
It becomes very tasty. Crispy on top, soft inside. Yam yam.
Put another oven of chicken same way, another pirex.
you will love it and feel fat as i feel today! I ate this last night! and my breath stinks this morning with the garlic! so i'm sorry, i can't give you a big kiss!

Choose russet potatoes, long whites, red-skinned, or new potatoes.
Scrub potatoes well. Halve or cut potatoes into quarters or eighths, depending on size.
Preheat the oven to 375°.
Pour about 1/3 cup of olive oil, melted butter, or other fat into a baking
Add potatoes to the baking dish and turn to thoroughly coat with oil. Season with salt, freshly ground pepper, and other seasonings as desired.
Roast, turning every 10 to 15 minutes, at 375° for 1 to 1 1/2 hours, or until crisp on the outside and fork-tender on the inside dish.

Boil the potatoes. Leave the skin on and the potatoes whole. In a container with a lid, put in the potatoes, the juice of about half a lemon per dozen or so potatoes and plenty of butter. Shake the container vigourously so the potatoes become covered in the 'batter'. Oil a baking tin and put them in the oven until they're golden brown/
This is how my dad does them and they come out so good and crispy on the outside!

EXCELLENT - SIMPLE - RECIPE;
1 lb. small New potatoes, quartered
4 tbspn. extra virgin olive oil
white pepper to taste
salt to taste
2 tbspn. onion powder (optional)
chopped parsley
paprika
1. Heat oven to, 400oF.
2. In a bowl, mix the first 5 ingredients
3. Place potatoes skin side down on a baking sheet.
4. Bake for 45 minutes.
5. Remove from oven and place in serving bowl.
6. Garnish with paprika and then parsley.

I leave the skin on and wash the potatoes, then cut them in to quarters. In the meantime, get the oven hot to about 180 degrees celcius and melt a big chunk of butter and a heaped desert spoon of crushed garlic in the pan. When the butter is melted, add the potatoes to the pan and mix them around to coat them. Cook in the oven for about 30 minutes, just poke a fork in to make sure they are cooked. There is not a person who has eaten these that doesn't come back for more.

This is the way I was taught by my mum and she makes the best in my opinion!
Par boil the potatoes in salted water (very important to add salt to the water). Drain them and shake them in a colander. Heat up some vegetable or sunflower oil in the oven and add potatoes to the hot fat. Roast for 45 mins - 1 hour on 220 degrees. Perfect crispy roasties every time!

I like using fingerling potatoes, cut them into cubes, and toss them in a large plastic bag with olive oil, fresh rosemary, and fresh black pepper. Empty the contents of the bag onto a baking sheet, and bake at 350 until potatoes feel firm, but tender when poked with a fork.

after cutting them up into about 1square inch pieces make sure you wash them well, untill water runs clear
add some kind of oil of other kind of fat
i find that plain vegetable oil works better
season with black and cayenne pepper and some coarse salt
pop into a pre-heated oven ( 350ºc ) for about an hour

here ya go... take 6 potatoes wash and scrub em and for heavens sakes leave the skin on! cut into bite size pieces. lightly oil the baking pan so they dont stick . pre-heat oven to 350 degrees celcious. spread potatoes on greased pan and sprinkle salt, pepper, and a light dusting of garlic powder. bake until they are golden!
