Just the other day, I was mentioning something about being allergic to eggs, just like his fiancee. And he said, "leave her out of this." What is wrong with him? Why does he get so defensive when any family member talks about her? She happens to be a different race (Indian), but we can communicate fine with her, she was born in the states.

I just want to talk matter-of-factly about her. But he won't have any of it.

Maybe he is just self-conscious because she is Indian, and he doesn't really realize that your family has accepted that, and fears that in a subtle way you are belittling her. You should just tell him that you do like her and it doesn't matter where she is from, you would just like to be able to mention her in conversation, without him getting upset. Maybe it will help him deal with whatever his problem is.

He is over-protective of her and doesn't want to hear anything he may think would offend her and he loves her. He sounds like he needs to have a talk with. Have you tried talking with him about why he doesn't want to talk about her? Ask him politely as you can, on if he would talk with you about her or why he doesn't want the family to speak of her.

Maybe the fact that she is of a different race is worrying him more than he likes to admit.

he feels himself that she is inferior, or he wouldn't take offense at nothing, secure people are well adjusted people. it probably won't last once she has matured into middle age and lost her 'cuteness'.

He probably notices how you stare at her butt all the time. That would be the only thing I can think of.
