i wanna make the eggs like how IHOP does it

Use a small non-stick skillet. Put in a small amount of butter and melt it over medium heat. Break eggs into the skillet, add a spoonful of water and cover the skillet with a lid. Cook on med-low and after a minute or two peek to see if the steam from the water has caused the yolks to be slightly cooked. When the yolks are slightly cooked, turn eggs and continue to cook for a few minutes more without the lid.

It's the steam cooking the yolks which makes it easier to flip them without breaking the yolk. The aim is to have the yolks slightly congealed and not runny, yet not solid. It takes a bit of practice. Keeping the heat lower gives you more control, too.

'Over medium' — cooked on both sides until the yolk is fairly thick but still a liquid

cook them on one side...then flip it gently over and turn off the heat....when the egg white over the yolk is cooked, it's done....you can vary the doneness of the yolk by checking it frequently
