I use Mozarella, Parmesan, and I also use Ricotta cheese. Put a container of Ricotta into a mixing bowl, and add an egg (or two depending on the amount of Ricotta cheese and the size of the pan of lasagna), mix the egg in thoroughly with the Ricotta and use that in each layer of the lasagna. Hope this helps.

You'll be ok with the Mozzarella cheese. I use cottage cheese instead of ricotta cheese in mine. I like it SOOO much better. I also use 1lb of sausage mixed with 1lb of beef. Of course, If you are making a smaller portion, cut the amounts in half.

Below is a website about the Gruyère cheese.

I like to use cottage cheese, but I drain a lot of the liquid out of it first. I add mozzarella cheese and Monteray Jack cheese to it. It is really very good!

gruyere is a wonderful cheese from switzerland, if you want something similar i would use either muenster cheese or your already mentioned mozzarella. you can usually find gruyere at a specialty store, but be careful, since it is an import it can cost up to 14 dollars a pound!

Mozzarella or ricotta cheese are great substitutes for gruyere cheese.

The traditional cheese is ricotta and parmigiana, I also mix the mozarella in it as well.. I find the ricotta makes it very creamy and blends well with the sauce.
