I have lots of cocktails that I love, but when I'm going to a bar for the first time and want to figure out if they are any good at making cocktails, I order a Tom Collins.

It's a great drink, and one that every bartender should know. It's really easy to make, but apparently also really easy to mess up. This makes it the ideal test-drink for a bar.

I've had some great Toms Collins, but I've also had some terrible ones. Some bartenders don't use fresh juices, others forget to shake the drink; some use the wrong glass, others put the soda water in and THEN shake it. I've even had bartenders use something other than gin in my drink.

It's a beautiful drink: classic, stylish, and tasty. When I'm at home, I'll mix myself a Martini, or a Yellowbird, or just a neat scotch. But when I'm going out, it's the Tom Collins more often than anything else.

Amaretto sour on the rocks. 1 part amaretto liqueur and 1 part sour mix over 2 ice cubes, in a tumbler. Used to like pina coladas and daiquiris but i eventually grew a bit more sophisticated.

LEE'S BLUE SKY! ! part Vodka 1/2 part Blue Curraco splash of pineapple, lime and orange juice. Swig of triple sec. Shake and pour with ice into a shaped glass. Top off with a cherry and lime!
