It should be caramel, but lots of folks and products are using carmel.

Caramel. Carmel is a place in California. People, a lot of times don't spell very well.

For sweets, personally I have only seen caramel (although I have heard it pronounced "carmel" despite the spelling). Carmel is a city on the California Coast, as well as a county in New York.

Caramel is a food product - but Carmel is a city in California. I think it would be rather hard to get Carmel on top of some ice cream.

The sweet is caramel,(caramelised sugar ) the only Carmel i know of is the 'mount Carmel '
overlooking the Mediterranean sea , a place of religious significance to both Judaism & christianity.

Maybe the word is said a little different because of the way people talk in different regions. Some people say Hello and some say Howdy. I say Carmel up here in Canada
