First, you would have to know what it is about you that she finds immature. Ask her what it is about a guy that she is attracted to...be sincere and also ask her in what ways you could be more mature. It could be something as simple as the way you behave with friends or how you talk to people. I am positive if you ask her...she will appreciate it. It shows your interest in her and that you are willing to listen to her.
And of course you are immature now...you are fourteen. But like I said, there are things you can do that make you more mature in her eyes. The first one and the best one is to ask her what she looks for in a relationship and the person she is seeing.

Immature people are more inward or self-focused, can only think about themselves or things in relation to themselves, and are basically ruled by their emotions and feelings. The most extreme example of this is a baby. All a baby really thinks about is eating or what catches his eye and just cries when he can't have it NOW.
Mature people are more outwardly oriented, can relate and empathize with others regardless of whether they get anything out of it or not. They tend to be more sharing and less invested in things. They understand appropriateness. They don't do things to provoke a reaction or hurt people for fun or to show how great or strong they are. Mature people are ruled more by logic and their principles of what's right and fair and are able to control their emotions and understand the consequences of actions. They are able to think of others' well being rather than just their own. An extreme example of this would be Mr. Spock. He is completely ruled by principles and devoid of emotion. But he's the one that you can count on in any situation. And he was willing to sacrifice himself for the greater good. Mature people tend to want to make the world a better place, not just for themselve, but for others.
The trick is to be somewhere in between, but hopefully, closer to the mature side

If this girl really liked you she wouldn't ask you to change. Personally i dont think you should change just for a girl. There will be plenty of other girls that come along that will like you for you and not try to change you. But if you want to change i guess i would recommed to watch movies and observe the behavior the the "mature men" in them. If you decide to change for this girl just be careful that you dont lose the real you. It's really hard to find yourself again.
Oh and all men no matter their age can be inmature. It's something men as a group never quite grow out of.

Listen, she may think she wants a mature guy, but she will end up breaking up with him for being to serious. Don't change for her. Tell her you really like her, but that this is who you are.
