Infantry are basic frontline ground troops. Cavalry traditionally rode horses into battle and performed supporting combat roles. Chariots and body armor came into play later in history, and finally tanks and other armored vehicles. However, the US Army still maintains the Horse Cavalry Detachment of the U.S. Army's 1st Cavalry Division, a unit still trained to ride horses in combat.

Additionally, recent US Army Special Forces soldiers used horses extensively while operating with the Northern Alliance in Afghanistan, perhaps the first official unconventional/special operations use of cavalry in modern history.

Infantry soldiers are foot soldiers and basically walk into battle and are mainline squads. Cavalry soldiers on the other hand fought mounted on horseback and supported the infantry. Now though the cavalry uses support vehicles like helicopters and Strykers. Although recently in Afghanistan they did use horses in the mountainous areas where vehicles can't go.

Cavalry goes hunting for the enemy, initiates contact, and fixes the enemy formations in place. Combat brigades and or division move in and destroy the en my while the cavalry disengages. Cavalry does heavy recon by fire basically.

Cavalry isn't just helicopters. That would be "Air Cavalry".
