Not sure that this is the exact recipe that they use at Henry's but pretty darn close, try it out and see what you think.
2 cups Hellmann's Mayo
1 cup water
1/3 cup powdered milk
1ounces crumbled gorgonzola cheese
or use bleu cheese dressing to taste
1/4 teaspoon garlic salt

Blend in a mixer until smooth and creamey, chill at least 1 hour before using. Grab that bag of tortilla chips, some Pace Picante Sauce(you can use the mild, but, hotter is better!!!!) dip the chip in the hot sauce then spoon on a little of your white sauce and experience Heaven on Earth. LOL, hope you enjoy!!!

Addendum to the above answer.
Here is another recipe you can try that I think is even closer and is the one I use now. Here it goes.

1cup Hellmann's
1/2 cup water
2.5 Tablespoons of powdered milk
2 ounces of Bleu Cheese Dressing
1/8 teaspoon of garlic salt

Heat an ounce of butter in a saucepan, add about 2 tbsp of flour and mix it until thick for about a minute. Take pan off the heat and add about 1/2 cup of milk and put back on the stove. Leave to get thick again. You can add a little cheese if you so desire and add a little white wine to make it more elegant.
