I think the only time of year you would have a problem would be during Lent. Many catholic churches are reluctant to perform weddings during this time because it's supposed to be a somber, serious time period. It's usually only in the case of extreme emergency that they'll do a wedding during lent, such as one person being sent on active duty.

The Catholic Church itself has weddings every day of the week (except during Lent, i think). Your Particular church may have certain guidelines they follow just to keep everything organized, but if you ask for a wedding on a particular day, I'm sure they may be able to make arrangements for that.

I got married on a Friday!!

It is also up to the priest - if you want to get married on Monday and the priest won't allow it, get another priest and you can still get married in the church you want. A church belongs to the people not the priest. You can get married anyday in the Catholic Church except for Good Friday (or Easter Saturday I think).

A wedding can be on any day of the week. If you think about it- the reason Fridays and Saturdays are most popular is because that is most convenient for the GUESTS.

A word of caution- most Catholic pastors have Monday as their 'day off' if you can call it that.

That varies from church to church. If you find one that says no, call another and another until you get a yes. Some years ago, my brother and his girlfriend had a baby and they had some trouble finding a church to baptize the baby because they weren't married. My husband and I went to our parish and explained the problem and their attitude was completely different -- like, "Oh my God! An unbaptized baby? Let's get them in here right away!" So it definitely pays to shop around, even in churches.
