Spend time downtown (Village, Chinatown, Lower East Side) for both.
All those cheap knockoff bags everyone wants are in Chinatown and the best "real NYC" bars are in the village.

if you love shopping, then go to woodbury outlet stores. they have shuttles from nyc because they get lots of foreign travelers that go there. they have all the name brands like chanel, armani, gucci etc. it's about an hours away from the city but if you like shopping that's the place to go.
if you want to stay in the city, then just ask the hotel concierge and they'll tell you where to go for deals.
clubs depend on your taste, but if you are decent looking, then you won't have problems getting into most of the hot clubs in the city.

many things, musicals, shopping, historic sightings. Just go and have a good time, its usually more fun to see something while walking and be interested in it then to plan out a full schedule because that usually never works out anyway.
