They don't have to be fresh. -Frozen is just as good!!
there is a mistaken popular opinion that blanching (short cook) removes too many vitamins and minerals- that is false. You only loose a very small amount IN FACT the frozen ones actually have more of these important minerals because they must be processed with in a few hours of harvesting. Whereas those so called FRESH may be days before you get them at the store. During those days is when you lose some of the important minerals and vitamins. This has been scientifically researched and it is true. Frozen is fresher than fresh. UNLESS all of your favorite vegetables grow in your back yard 12 months a year.

All great answers here. The trick is to eat all vegetables fresh and raw. You don't lose any vitamins this way.
But steamed or raw, the best vegetables health-wise are ones that are the most colorful, for they have the most anti-oxidants/vitamins/cancer-fighting power.
Cruciferous vegetables like cabbage and broccoli have lots of fiber; while tomatoes, red peppers, carrots and yams/sweet potatoes and pumpkin have lots of beta-carotene and vitamin C.
Dark green leafy veggies are extremely healthy (like spinach and arugula, mustard greens, etc.) - lots of vitamin A.
You need a variety of vegetables to stay healthy. Mix it up and enjoy them in a stirfry, or in a salad, or kebabs, or fajitas.
Onions may have high sugar content, however, there is blood-cleansing and immunity boosting enzymes in them.
Season up veggies with fresh herbs (basil, rosemary, thyme, sage, parsley, mint, tarragon, chives) and lemon juice (more vitamin C).

Kale is very high in vitamins and it tastes good in soup too! Any vegetables that are bright colored, red, green, orange are usually found to be highest in vitamins so GO FOR THE COLORS
And when shopping for veggies go for the frozen, they have been picked at the peak of freshness and flash frozen so they are actually the freshest you can get unless you grow your own or buy from local growers

actually, raw veggies are much healthier than steamed ones. When you steam or boil a veggie it loses it's main vitamins and minerals in the process.
