First of all, pick something traditional and obvious to say that he/she will be expecting, like, "You are so beautiful. You are incredible. You are smart - I love the way you think."

Next, pick something that you know he/she WANTS to be recognized for. Say for example, your guy enjoys working on cars... say, "I like the fact that you work on cars. You really helped me when you fixed (xyz) problem on my car. I really appreciate it." or - "You work hard at school." Make it be about something they are DOING, not just the way they look or what they have.

Lastly, go out on a limb and pick something quirky that will make him/her laugh that you said so. Like, "Your dog is a riot," or, "I like the way that you turn red when you laugh."
