Egg WHITES are possibly the best source of dietary protein for human beings. Egg YOLKS contain so much cholesterol that one of them contains more than 70% of the recommended limit for HEALTHY humans (more than 100% for people already struggling with high cholesterol). Since that latter group includes me, I limit myself to two egg yolks per month. Yeah, it sucks. But you can make a decent egg sandwich from four egg whites and one-half an egg yolk.

They are a good source of protein, but only eat them a couple of times a week. They are very very high in cholesterol. And, make sure the are cooked completely because of salmonella.

In moderation.
And the chances of getting salmonella from raw eggs are minimal, so dear Americans, stop freaking out.
