Nope! Simmering makes the sauce. I always add a bit of sugar to mine.

The experience that i've had with simmering my sauce and the meatballs is that the meatballs soaked up the sauce and the meatballs took on a great flavor of my sauce and were tender and juciy

No. The only thing that will happen is the flavors will meld together better. If you think the sauce is too bitter when you first make it, then fix the problem in the beginning and then let it simmer. If it is too bitter at the start and you let it simmer anyway, then yes the sauce's bitter taste can intensify.

Simmering causes the flavors to meld and come together maing for a better, richer taste. The bitterness can be eliminated by adding a dash of sugar or slicing a corrot end to end and putting in the suace for about 10 minutes.

because if you put more than you should, it'll give your sauce bitter test.

ok i know this sounds weird... and i dont know if it will help you... I LOVE pasta and marinara.. but when i was pregnent i was getting massive heart burn! my oB told me to slice a carrot length ways while simmering you pasta sauce.. add the carrot slices for 15 minutes.. dont over cook the carrots because the will get smushy... this will absorb the acid in you pasta sauce.... i dont know how it works but it did for me....good luck!
