Well, I can't compete with Miss Paula Deen either, however, this is a healthy meatloaf and my personal recipe.......
THE ANSWER MONSTER'S
LOW-FAT MEATLOAF & GRAVY
Pre-heat oven to: 350 degrees and make sure oven rack is in the center.
CHOP FINE AND PUT IN A VERY LARGE BOWL:
1 medium onion – finely chopped
3 stalks of celery – finely chopped
6-8 button, or (I like crimini) mushrooms- finely chopped
2 cloves of garlic finely minced
ADD, COATING ALL THE CHOPPED VEGETABLES
1 tsp. salt
½ tsp. freshly ground black pepper
1 tsp. dried oregano
1 tsp. dried thyme leaves
1 tsp. rubbed sage
½ tsp. Steak & Chop seasoning (any powdered steak seasoning is fine)
ADD TO THE BOWL:
1 lb. Extra Lean Ground-Beef (97% fat free) if you must indulge. For non-red meat eaters, fat-free turkey works great.
2 eggs (well-beaten in a separate bowl BEFORE ADDING)
2 tsp. aged balsalmic vinegar
1 c. plain bread crumbs (from can – unless you can make your own in food processor). I only use the can when I am in a hurry or tired, but I like stale Italian Foccacia bread made into crumbs in the food processor.....so good!
Spray loaf pan (9x5x3) with PAM, place meatloaf mixture in loaf pan and bake at 350 degrees for 55 minutes. Allow meatloaf to ‘rest’ before cutting so it retains all the juices.

QUICK-N-EASY LOW-FAT MUSHROOM GRAVY
SAUTE OVER MEDIUM HEAT IN A MEDIUM SIZED POT:
8 button or crimini mushrooms, sliced
1 Tablespoon of Extra Virgin Olive Oil
ADD & STIR CONSTANTLY:
2 tsp. thyme leaves (dried or fresh)
½ tsp. fresh ground pepper
1 beef bouillon cube
WHEN THE ABOVE IS COOKED FOR ABOUT 3 minutes, ADD & STIR IN SLOWLY:
½ c. merlot or burgundy wine
2 cans of Fat-Free Cream of Mushroom Soup
Add water to your desired consistency of gravy thickness, turning heat to precise simmer (medium – to – low)…. Until your meatloaf is ready to serve.
WHY LOW-FAT?
I save all my calories for the extra buttery, roasted garlic, cheesy mashed potatoes that I serve the above with! :)

Paula Deen's Cheeseburger Meatloaf Recipe is by far my favorite one. I like to serve it with oven-roasted potatoes, or even as a sandwich it's great! The recipe is as follows:
Cheeseburger Meatloaf
1 pound ground beef
1 teaspoon House Seasoning (1/2tsp garlic powder, 1/4 tsp black pepper, and 1/4 tsp salt mix)
1 medium onion, chopped
1 medium bell pepper, chopped
1 cup grated Cheddar
2 tablespoons Worcestershire sauce
1/2 cup sour cream
1 cup crushed crackers (recommended: Ritz)
1 teaspoon seasoned salt (recommended: Lawry's)
2 slices white bread
Sauce, recipe follows
Preheat oven to 350 degrees F.
Mix all ingredients together, except the bread slices and Sauce. Shape into a loaf. Line a 1 1/2-quart loaf pan with the bread slices. Place meatloaf on top. Bake loaf for 45 minutes. The bread absorbs the grease and should be discarded after loaf is removed from oven.
Sauce:
1 (10 3/4-ounce) can condensed cream of mushroom soup
1 cup milk
1 1/2 cups grated Cheddar
Chopped onions, optional
1 bunch fresh parsley leaves, chopped, optional
Heat the soup and milk over medium heat; add the cheese. Add the chopped onions and parsley to the sauce, if desired. Pour Sauce over the meatloaf or pass at the table.

Paula Deen's basic meatloaf, I make it all the time.
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour

I don't think I can top a celebrity Chef like Ms. Dean with "My" recipe, then again this ain't no Iron Chef:
Get a bowl and mix it up, cook it and serve with mashed taters, gravy and some fried succotash:
Ingredients:
1-1/2 pounds ground beef
1 can (8 ounces) tomato sauce
1 cup soft bread crumbs
1 egg
1 small onion, finely chopped
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme leaves, crushed
1/2 teaspoon garlic salt
1/4 teaspoon pepper
Topping
1 tablespoon packed brown sugar
1 teaspoon dry mustard
Heat oven to 350°F. Measure 1/4 cup tomato sauce, combine with topping ingredients in small bowl.
Set aside.
Combine remaining tomato sauce with remaining meatloaf ingredients in large bowl, mixing lightly but thoroughly.
Shape beef mixture into 8 x 4-1/2-inch loaf on rack in broiler pan. Spread topping over meatloaf.
Bake in 350°F oven 1 hour to medium (160°F) doneness, until not pink in center and juices show no pink color.
Let stand 10 minutes before cutting. Cut into slices.

my meat loaf is crazy!! i make it huge so i can have it cold for days lol ok here it goes
3 lb ground chuck
1 lb Tennessee pride sausage bulk tube regular flavor
1 large onion chopped 2 med
3 cloves garlic minced
1 green pepper diced
salt and pepper to taste i use 1 and 1
1 tube crackers crushed
1/2 cup milk
1 can hunts meatloaf mix found in the tomato sauces
2 eggs
2 tlb catsup
ok take the crackers put them in the bowl you are going too mix everything in add all the stuff but the meat ,mix it up then add the meat mix it up if still wet add some more crackers crushed....make into 2 loaves and set on a few bread slices in a cake pan bake 350 for 1 hour covered then take off the cover and finish it off 1 more hr or so depending on how thick you make the loaves
i make it with mac in cheese ,or fried potatoes ,veggies

500g minced beef
1/2 cup dry breadcrumbs
1 onion, finely chopped
1tbs finely chopped parsley
1 tsp curry powder
1 egg lightly beaten
1/4 cup water
1/4 cup milk
BBQ Sauce
1/2 cup water
1/2 cup tomato sauce
1/2 cup worcestershire sauce
1/4 cup brown sugar
2tbs lemon juice
2tbs white vinegar
30g butter
1tsp instant coffe
*preheat oven to 180 celcius. Lightly grease a baking dish
* in a large bowl combine mince, breadcrumbs, onion parsley and curry powder. Add egg, water & milk. Season to taste. Mix until well combined.
* shape meat mixture into a 10cm x 20cm loaf. PLace in baking dish ( i like to do it in the dish. not as messy!!). Bake 30mins. Remove from oven pour and discard fat
*BBQ sauce - put all ingredients into a med saucepan. bring to the boil, stirring. reduce heat and simmer for 5 mins.
*pour sauce over loaf. bake for a further 40-45mins basting frequently with sauce.
Serve sliced hot or cold with chips and salad (well thats how I have it anyways!)
