you dont need the celery but dont use the carrots you only simmer for hours to get the best flavor the less cooking time the less flavor

This is an alternative bolognese sauce that does not call for celery, so it can be done. You could use the sauce without simmering it for so long, but the flavors will not be as bold. I would recommend letting it simmer for the full time, so that it can thicken and the flavors can blend accordingly.
Bolognese Sauce:
1 c. mushrooms, sliced
1 lb. hamburger
1-2 lg. onions, chopped
1/4 lb. Prosciutto ham
2 tbsp. butter
2 tbsp. olive oil
4 c. or 1 can plum tomatoes
1 sm. can tomato paste
1 clove garlic, crushed
Saute onions, garlic and Prosciutto until onions are golden. Add hamburger, cook until browned. Add mushrooms, tomatoes and paste. Simmer for 2 hours, until thick.

I think you are on the right track with those two choices. I had some spaghetti bolognese in Luxembourg which was great but no recipe. I had a package of dried ingredients recently which was tasty but not bolognese to speak of. Is it really that hard to find a recipe on the internet? Recipes here involving beef are exactly nowhere--as you know.

it tastes best if you do simmer for a long time,and yeah it will be some different if you dont have celery ,but it will be ok ....try getting celery seeds they keep well and you can toss in a bit when you dont have celery good luck

Sure you can. Use other veggies like onions and peppers or anything that you have and of course tomatoes and spices and call it Bolognese.
