Everytime I eat this for breakfast, this thought always comes into my mind. I've been curious about it.

It has nothing to do with peppercorns. Its just an old reference to salt dating back about 1200 years ago.

The word "Corn" is an old English word that was used for anything small & rounded in shape,... That s why English speaking countries call the sweet & starchy food "Corn" when the rest of the world calls it Maize !
This is also why you have a "Corn" on your foot,... "Corned Beef" got it s name from the small, almost pea sized chunks of Salt or "Corns of Salt" used to cure the beef which also killed bacteria, preserved the meat & the addition of spices was used to mask the smell & taste of decomposing meat due to a lack of refrigeration.

I love corned beef you gust have to grow up on this stuff .I think it has some tip of popcorn Kringle in the meat.

I believe it has "peppercorn" in it. I'm not sure exactly where it's used in the recipe, but I think that's where the "corn" comes in.

They use peppercorns in the brine they use to cure it

wahts weird is i have had red squirrel, rabbit, and pheasent but never had corned beef. strange.
