I think you just need to sign your name. Ending a letter with cordially or sincerely is a sign of respect, and not putting that would be a way to show her your lack of respect.

The most affective way to handle a bad boss is to go over her head as that is the person or people she is scared of to death. If that doesn't work, look for other work. This is a prosperous society and you don't have to take crap. But hate mail could just make things worse.

The best way to end a letter you hate...
Well, if it was someone other than your boss, I'd say the best way to end it is to ball it up and throw it away. But since it is, your boss, I'd say don't end it with something that would likely be seen as sarcasm; you never know when you might find yourself working for her again, or someone worse who knows about the situation and might be favorable to her side.

Never burn bridges or ladders, as you might need them to travel the other direction.
End the letter professionally and move on, without blame. If nothing else, it shows you are a true professional in your field and handle adversity well. If nothing else, your next position might want to know why you quit. A well worded letter of resignation exemplifies your style and professionalism.

If she harassed you - you should report her to the Labor Board, your lawyer and her higher ups. So in that case, I would end it by saying you will be sharing this matter with (the higher ups, lawyer or Labor Board), and then just sign your name. Then drop down a couple of lines and then put
cc: Labor board (or whoever).
That will bug the hell out of her, and perhaps put her in hot water.

Incidentally, it's always wise to leave gracefully. You never know when you'll be dealing with those same people again. Also, here's a thought: Sometimes people harrass people who they feel have great potential. While you're secretly hating her, she may be bragging about you, and developing you for greater things.

Forget about the sincerely, yadayadayada. This way it is open to interpretation. Not technically rude, but you know what you mean! HA!
I did this via e-mail. Again, not technically rude (e-mail is a legal doc) but soooo impersonal. The reaction was splendid.
