1 (15-ounce) can very young early peas (recommended: Lesueur)
1/4 cup chopped onions
2 boiled eggs, crumbled
Salt and freshly ground pepper
2 to 3 tablespoons mayonnaise
Chopped pimento, optional

In a colander, drain peas very well. Place drained peas in a medium bowl. Add the onions, crumbled eggs, and mayonnaise, tossing to combine and coat peas. Season to taste with salt and pepper. Add pimento, if using. This recipe is easily doubled or tripled.

SERVINGS About scaling and conversions

INGREDIENTS
8 slices bacon
1 (10 ounce) package frozen green peas, thawed and drained
1/2 cup chopped celery
1/2 cup chopped green onions
2/3 cup sour cream
1 cup chopped cashews
salt and pepper to taste
DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
In a medium bowl, combine peas, celery, scallions and sour cream. Toss gently to mix.
Just before serving, stir in cashews and bacon into salad. Season with salt and pepper.

Here is a refreshing spring salad idea. Enjoy!

CORN AND PEA SALAD
1 can white corn
1 can peas (small peas)
1 can green beans (cut)
1 small onion, chopped
1 jar pimientos (about 1/4 cup)
1 cup celery, chopped
1 cup green peppers, chopped
Dressing:
1/3 cup vegetable oil
2/3 cup vinegar
1 teaspoon pepper
1 cup sugar
1 teaspoon salt

Drain corn, peas, green beans and pimentos.
Combine all ingredients in bowl and set aside.
Dressing: Mix all ingredients and bring to a boil in saucepan.
Let cool.
Pour dressing over vegetables and mix well.

Black-Eyed Peas Salad with Basil Dressing

INGREDIENTS:
3 cups canned or cooked black-eyed peas (2 15-ounce cans, drained)
1/4 teaspoon salt
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1 small sweet red bell pepper, seeded and finely chopped

Basil Dressing
1/4 cup cider vinegar
3 tablespoons chopped fresh basil, or 1 teaspoon dried
2 to 3 medium cloves garlic, crushed
1 1/2 teaspoons sugar
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt
1 cup olive oil
fresh basil or parsley for garnish

PREPARATION:
In a serving bowl combine black-eyed peas, 1/4 teaspoon salt, chopped onion, celery, and green pepper. Set aside.
In a small bowl or other container, whisk together the vinegar, basil, garlic, sugar, remaining 1/4 teaspoon salt, and pepper.
Gradually whisk in the oil until the dressing is well blended. You can use a blender for this step, if desired.
In a medium bowl, combine the black-eyed peas, the chopped onion, celery, bell pepper, and basil dressing. Cover and refrigerate until thoroughly chilled, at least 2 hours or overnight. Serve with a garnish of fresh parsley or basil, if desired.
Serves 6.

Beans & Peas Salad

INGREDIENTS:
400ml yoghurt (hang in a musling to drain all the whey)/Low-fat sour cream
1 can chickpeas
1 can red kidney beans
1 can green peas
1 large green pepper diced
8-10 cloves of garlic (adjust this to suit your taste if required)
1/2 tsp red chilli powder
1 tsp cumin powder (this will taste best if freshly roated and coarsely ground)
Salt to taste

PREPARATION:
Whisk the yoghurt/sour cream to remove lumps if any.
Mix in all the ingredients except the salt.
Chill the salad. When you are ready to eat add salt and serve.

Try this one. Take a 15 oz can of peas and cook. Set them aside to cool. Take one stalk of celery and dice it into small(1/4 x 1/4 inch pieces). Cut up 1/4 pound of velvetta cheese(again 1/4 x 1/4 " cubes) into small cubes. Add the peas(after cooling), the cheese, and celery in a small bowl and add miracle Whip salad dressing until creamy. Refrigerate until your ready to serve.

Oh this is easy. You need a can of peas---not frozen! Drain those, add some Miracle Whip (not real mayo!), a spoonful of sweet pickle relish, and a stack of American cheese slices cubed up. Mix it all together and you have not only my mom's recipe from the 60's, but the favorite salad at my old restaurant.

There are lots of ways. Here's a quick and easy one and it is very good. Ice berg lettuce, one can of peas, drained, and one can of crushed pineapple with juice. Mix well.
