ok i work in a restaurant and we sell corn on the cob... the corn is yellow but when we boil it some of the corn turns brown does anybody know why ,,,,,,,, and no they are not gone off its really bugging me and my boss ??

Why boil so long? why not preboil and grill it to order. It keeps it frimness and color and you can brush it with seasoned butter at serving. You guys are leaving in the water way too long and no one is going to want to eat it. Why not find a new restaurant to work in?????? I've looked around on the internet and no one has mentioned the corn turning brown, I have eaten at a restaurant and the they served gray corn, but that had to do with the reaction to the metal can it came out of. Have a look at these sites for proper preparation and I think it will save time and effort. You can pre-prep the corn in the afternoon, refrigerate it and at opening set them in shallow pans and refrigerate in the fridge on the line. At order, place it on the grill(cooler part), brush a bit of butter on and slowly turn to warm evenly and prevent burning. It should be done in about 5 minutes(test it to be sure, and taste it to be sure) at the same time as your main dish. Don't forget to season your butter, but if that won't work, make up a seasoning and sprinkle a little on the corn at the buttering stage. Good luck!!!

Cooking it too long, or the corn is not as fresh as the rest.

the freshness of the corn. the fresher, the more consistant.
