Sometimes the most difficult foods to cook properly is the simple ones. Look a perfect pot of pasta, not to many people get that right

Paella. I can never find the right rice and then when I get some, I don't seem to be able to cook it to just the right consistency, it's either too watery or too overcooked or too "chewy" (like hard still in the middle), or I cook too much and then have rice forever.

Broiled Monkfish and Peanut Brittle are my two worst. I always overcook the peanut brittle and the monkfish is just hard to cook right due to the level of fat in the fish.

FUGU
It is a type of Sushi made from Blowfish.....If it is not cut properly the person eating it will die.
That makes it pretty important that the preparer knows what they are doing.
It is the only dish I know of that if made improperly you will die from it,,,,,can it get any harder than that?!?

Buttercream frosting. Mine always looks like melting small curd cottage cheese in a butter sauce. Disgusting.

I would say chicken gizzards. They are hard to get the grease hot enough that they cook hard enough for you to eat.

divinity candy and peanut brittle...if the humidity is not right in the weather, the candy just will not "take" and you will have a very sticky, tacky mess to try to clean out of your pans!!!
