anything your heart desires, the world is your bowl! Just thinking about it makes my head spin. however a good vegetable beef comes to mind

Here is a simple, delicious, healthy soup. It is impressive, but really easy to make. Enjoy! (I LOVE SPINACH!!)

Tortellini Tomato Spinach Soup
1 tablespoon olive oil
1/2 cup minced onions (about 1/2 small onion)
1 garlic clove, minced
4-6 cups chicken broth or vegetable broth
1 (14 ounce) can whole tomatoes, coarsely chopped
1 (9 ounce) package fresh tortellini or dried tortellini
kosher salt
cracked black pepper
10 ounces fresh spinach or frozen spinach, defrosted and chopped
1/4 cup freshly grated parmesan cheese (optional, but highly recommended)

In a soup pot, heat olive oil over medium high heat.
Saute the onion and garlic, stirring often until onions are translucent, about 5 to 7 minutes.
Add broth and tomatoes, turn heat up to high, and bring to a boil.
Add the tortellini and cook according to package instructions.
When tortellini is almost done, add spinach and taste, adjusting seasonings with salt and pepper.
Serve immediately.
Garnish each serving with a sprinkling of Parmesan.

I had this soup for dinner this evening as leftovers. It was great the first evening and even better this evening! And it's super easy to make if you know how to chop stuff and turn on your stove....really....that's all it takes. The only changes I made to the recipe was to use fresh spinach instead of frozen spinach and add a chopped whole chicken and one chicken bouillon powder envelope. Take a look at the link below:

QUICK CREAM OF SPINACH SOUP

1 (10 1/2 oz.) can cream of chicken
soup
1 c. milk
1 (10 oz.) box spinach, chopped

Thaw spinach ahead of time. Press out moisture. Blend milk into soup. Heat. Add spinach. Serve hot. This can also be cream of carrot, cauliflower, etc.

Here's what I usually whip up in a pinch:

1 carton Organic Chicken Broth
1 Tsp. Dried Thyme
14Tsp garlic powder
1/2 Tsp Fresh ground pepper
1 bunch fresh spinach
2 oz noodles or linguine
Shaved Parmesan Cheese

Heat broth and add spices. You can add kosher salt and pepper to taste. When liquid comes to a slow boil, add noodles or linguine. Simmer until noodles are tender. Clean spinach and remove stems, I usually don't chop mine but you can if you want. Add to broth until you have the amount you want in your soup. Simmer for 1 minute and pour into a bowl. Add shaved parmesan. Enjoy!

you can make just about any soup and put spinach in.
you can even throw a handful of frozen spinach in your canned soup.
