I am particulary interested in the South Beach diet. I have seen some good stuff on it on the net but I just don't fully understand how it works as in what I need to watch for on labels, what carbs are good and bad, etc. Any help would be much appreciated!

The healthiest way to eat for me and many others is the low carb lifestyle. My goals are to not only lose weight but to become stronger. Good cholesterol levels and stable insulin has helped me to become confident in bypassing the ailment that plagues my family, diabetes Type 2. Recently there were 2 studies proving, what I have known for several years.This diet is safe and healthy. Sure this diet is rich in protein, a very important nutrient since the entire body is made up of protein.
But may I point out that I have consumed so much more varieties of veggies because the majority of the planet's vegetables are low carb. I know that I eat more variety of vegetables than the average health-concious dieter. Being on a low carb diet for 4 1/2 years, I can assure you that this is a very good dietary lifestyle. Just ask my doctor.

The low carb diet primarily kicks up your glucagon, this is a hormone that is activated by the pancreas when it's metabolic partner, insulin, is stabilized. Glucagon enhances lipolysis while it tells the liver to shut off production of cholesterol. It also "flushes" excess cholesterol from the arteries and helps to relax the fine muscles that support the circulatory system, lowering th blood pressure.The first step to stabilizing insulin is to restrict the carbohydrate intake.This will ultimately improve the metabolism,improve cholesterol numbers,blood glucose and blood pressure. This will lead to weightloss. I improved my dietary lifestyle when I began low carbing by learning to eat healthier low carb/glycemic foods. I learned this in the publication "Protein Power" by Drs. Michael and Mary Dan Eades.

To the person posting the question, I suggest reading theSouth Beach Diet Book. Dr. Achinson explains his diet better than anyone. You should get the best understanding of low carbing by reading his philosophies. I am on Atkins and they are a little different.

Much of the weight that you lose on low carb diets is in muscle and water. Any real fat loss is because by cutting carbs, you are simply cutting calories. Here is why:

Carbs are the primary energy source for the brain and the entire nervous system. Also, they are the ONLY energy source for the kidneys. In a carb deficiency, the body will cannibalize lean tissue for the amino acids and use it to make carbs. This creates an increase in waste which the kidneys have to process (while low on fuel). These diets increase the risk of hypoglycemia and are very stressful on the kidneys.
