For 1 cup of buttermilk you can do the following:

1. milk with a little vinegar in it, 1 cup milk + 1 tablespoon vinegar or lemon juice (let stand 10 minutes)
2. Use yougurt (plain) or sour cream 1 cup
3. 1 cup of milk + 1.75 teaspoons cream of tartar

Basically, trying to replace the acidity you get in buttermilk.

If your recipe uses baking powder, the go for the milk and sour cream or yougurt for the extra richness since you don't really need the acidty to leaven the crust.

If your recipe has baking soda, then you need the acidity to leaving the batter.

Try this take a drinking cup use about a cup of regular milk and add a little bit of vinegar, and 1tsp baking soda mix with the milk it will rise let it settle. It is a homemade Verizon of buttermilk. I use it that way when I bake homemade brownies.

Place about a tablespoon of white vinegar in regular milk and let it sit for about 5 minutes. About the same thing, I have done this many times:)

Take milk and add a tsp of vinegar to each cup of milk and let it sit to "sour". You can also dip the chicken in mayonnaise, though this is adding more fat to the finished product.
