i have tried everything .Less yeast,more shortening,vice versa.I want ingredients for really fluffy bread. PLEASE.

my mom told me this and it works, don't use metal utensils or metal bowls in the making of bread! Also check how fresh your yeast is or maybe you're not using enough sugar?

A trick to keeping it from getting too crusty is to have a pan of water on the rack below the bread in the oven. It raises the humidity. Check every once in a while to make sure it didn't all evaporate.

I recently went to a Tastefully Simple party. They have awesome packages of beer bread. So soft and all you add is a beer, stir for a few seconds then bake. If you are interested, let me know and I will dig up the # from my catalogue.

your problem is not the yeast or the shortening- your adding far to much flour and its making your bread hard and heavy.

Check your raising agent/yeast heat and time. Pressuming you have kneeeded enough then check oven temperature. Considering they made bread on wood fuelled ovens, you only have to check your figures.

Try that: after taking it out of the oven cover it with a wet towel ( a cotton made one) and let it till it's completely cold. Good luck!

you might be kneading in too much flour
