Personally I really like the ones where there are extra verses at the bottom that we rarely sing. It's those verses that I enjoy the most.
I have an instrumental version of Hie to Kolob that has a distinctly Irish/Celtic flavor. It's amazing, as though the song were meant for it.
I really have too many favorites to mention, but I enjoy many of the same songs you mentioned (at least the actual hymns). I haven't thought about Bringing In The Sheaves in a long time. It IS an oldie but goodie, and Doxology was always a favorite when I was a Methodist.
Heir - Your's sounds a lot like I Stand All Amazed, that's another favorite of mine.

Jerusalem (based on Blake's poem - "And did those feet, in ancient times . . .").
However, since it refers to England, it would not be common in most American churches. For a more widely known choice I'd say Joyful Joyful We Adore Thee but only if you use the protestant version which preserves Beethoven's dramatic phrasing and not the catholic version which evens it out.

I have many favorite hymns, such as I know that my redeemer lives, the spirit of God, If you could hie to kolob, and I stand all amazed. But my favorite hymn is We Thank Thee O God For A Prophet. We know that if prophets did not exist on this earth, then we would cease to exist. But we do, and President Gordon B. Hinkley is a man of God, just like prophets of the past. I am so grateful that we have him in this time and dispensation. And I know that the words that I sing in those songs are true.

Micah 6:8- Charlie Hall....It Is Well With My Soul.... Amazing Grace.... Glorious - by Ever Stays Red.... Grace - by Phil Wickham.... I like most hymns and worship songs.... it just depends on the day.
