If you're cooking fillets, Squeeze lime juice over them and put them, covered, in the fridge for about an hour to marinate. Use a bit of butter to pan fry or broil, which ever you prefer. I personally like to grill them over charcoal but any of these work for a great tasting fillet whether snapper, bass, crappie, or trout. Enjoy

To pan fry: heat oil in a pan until you see a heat haze coming off it, then put the seasoned (salt and pepper at least) snapper in and add a knob of butter to the pan. The butter will go a little frothy. Cook 3 or 4 minutes each side. This works very well for any thin, whole fish (eg flounder), is nice and easy and needs only standard ingredients.
The fishy smell: Don't buy fish that smells like fish, it's already off, or well on it's way. Fish should have no smell when it's fresh, so always ask to smell the fish first, or buy when you know it's fresh. And always eat fish the day you buy it.
If the room smells like fish after cooking, try putting out a bit of paper towel with a little eucalyptus oil on it. Baking soda also absorbs smells, but eucalyptus oil is the best.

Oh gosh, if it smells, I don't think it's fresh. But, soak it in some salt water for about an hour or whatever time you have. Then dry it real well and salt and pepper it and rub it with olive oil. Heat your grill or use your broiler or a grill pan. If you use your grill, it's nice to have a basket or special grate, but that's for another day. Put the fish on a piece of oiled aluminum foil if you use the grill. The fish is only going to take about 10 minutes or less on each side and will start to fall apart pretty fast. If you use the broiler, line the pan with foil and oil the top. Broil for about the same amount of time, but don't take your eyes off it. Serve with lemon wedges. Fish is really good made in the microwave, too, with a lot of butter and lemon juice around it in a pyrex baking dish with waxed paper covering it. Doesn't take very long to cook, but the mic smells bad so you'll have to clean that after. I like the crunchy outside that you get from grilling or broiling.

Red Snapper Livornese
INGREDIENTS
2 tablespoons olive oil
1/2 small onion, diced
2 cloves garlic, minced
5 whole canned tomatoes, drained and chopped
2 tablespoons capers, chopped
1/2 cup sliced black olives, drained
1/4 teaspoon crushed red pepper flakes
1/2 tablespoon chopped fresh parsley
1 pound red snapper fillets
1 tablespoon fresh lemon juice
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a medium skillet, heat olive oil and saute onion until tender, about 5 minutes. Add garlic, and saute for 1 minute. Stir in tomatoes, capers, black olives, red pepper flakes, and parsley. Bring to a boil, and simmer for 10 minutes.
Spread 1/2 cup of the sauce in a 11x7 inch baking dish, and arrange the snapper fillets in a single layer in the dish. Drizzle lemon juice over the fillets, and then pour the remaining sauce over all.
Bake for 15 minutes for 1/2 inch thick fillets, or 30 minutes for 1 inch thick fillets. Baste once with the sauce while baking. Snapper is done when it flakes easily with a fork.

Is the fish whole (dressed), or is it fillets? If its whole, just stuff the abdominal cavity with fresh herbs...just jam little bunches in there. You can use thyme, lemon balm, basil...whatever you like. You don't even need to chop the herbs...just shove whole sprigs in there. Also shove a couple of thin slices of lemon in.
Score the skin of the fish with a sharp knife; don't cut too deep, you just want to open up the skin. Rub cooking oil all over the outside of the fish, and sprinkle liberally with salt and pepper (and/or lemon pepper, if you like).
I recommend grilling the fish, but you can broil it or even pan fry it. No matter how you cook it, only flip the fish once during cooking...too much movement can cause the fish to break apart.
