I think peeling tomatoes is about the most unnessary thing in the world. It is something I ALWAYS skipped and never had a problem with the result. I sometimes squeeze the seeds out for consistency purposes, but that's where I draw the line :)

What is your pet peeve recipe step?

I do peel and seed tomatoes . The result is called tomatoes concase. I absolutley hate tomato peels in my sauce. I also peel the peppers of stuffed peppers for the same reason
I have two pet peeves:
I dislike recipes that use bastard numbers for common ingredients i.e 7/8 tsp Hungarian paprika.
I know full well that whomever converted that recipe from a larger quantity used the standard procedure and wound up with a bastard number that they didn't bother to change. It's paprika, another 1/8 tsp won't matter.
The other one is recipes that ask me to use a small quantity of an expensive ingredient that I can only buy in larger quantities and may never use again. That's annoying

When I'm baking yeast bread, I never bring the eggs to room temperature. I figure if my other liquids are hot enough, it won't matter if the eggs just came out of the refrigerator. My bread always rises.

measuring! i never measure and everything comes out fine! I CAN JUST "EYEBALL" HOW MUCH I'LL NEED FOR A RECIPE.

Sorry, I do it by the recipe. I write recipes and the steps are there for the integrity of the dish. Much like baking "cooking" is also formulas, but then again some peoples pallets aren't as discerning as others

Any pasta recipe that says "Bring water to a boil". Duh! That's how you boil the pasta! I'm fairly sure I know how to do that on my own!

And when cookbooks have "DO NOT OVERCOOK". Um, duh???
