Hi,

I'm looking for some cheap, easy to make and YUMMY vegetarian recipes. Something like black beans and rice, but not that because that's what I've had for the last two nights!

Stir-fries - add some tofu and fry it up ahead of time to bulk up the protein. Or try Indian recipes - many of those are vegetarian and use beans and chickpeas. (I linked my favorite recipe blog - most of them are vegetarian.) Veggie chili is good too:

two kinds of beans (black, kidney)
canned chunked tomatoes
green pepper (chopped)
onion (chopped)
spices (mix or not - cumin, chili powder, a dash of cinnamon and cloves, and so on)

Pretty much cook until soft (put the onion and pepper in first) and the flavors all mix together.

If you want to use canned beans, remember to rinse, and if you have too many, just throw them in a bag and freeze them for next time.

HEARTY PASTA AND PINK BEANS
Serves: 6

Use hearty pasta from the frozen foods section for this filling dish. All you need to complete this meal is a bountiful tossed salad and some fresh bread.
16-ounce bag frozen tortellini (ricotta, tofu, or vegetable-filled), ravioli, ricotta cavatelli, or gnocchi
Two 16-ounce cans pink beans, drained and rinsed
28-ounce jar good-quality chunky marinara sauce
Bring water to a boil in a large pot and cook the frozen pasta according to package directions. Just before draining, add the beans to the water and cook briefly to heat them. Drain the mixture well and transfer to a serving container.

Stir in the marinara sauce and serve at once.

If you like asian flavors, keep some different curry pastes around. Then just chop up whatever veggies you have on hand, cook them until crip-tender in vegetable broth and add curry paste at the end. Super easy and good over either rice or noodles.

spanish rice is great, so are red beans and rice, curried rice and beans, or bean and cheese tacos, pupusas, or arepas Curried cous cous or tomato lentil cous cous is good too
