I dont have any heavy cream.....is it ok to use half and half? ill be using a lot of it?

Yes. I substitute half and half all the time. It is especially good in soups that call for milk.

Yes, you can use half-and-half in your oatmeal, but believe it or not you may be better off using plain, whole milk instead.

Half-and-half is half milk, and half light cream. If you include it in a recipe, there's a chance that it will separate if you allow it to boil. This is harmless, and it won't affect the flavor, but it may cause a bit of a watery consistency.

Definitely it will not be as rich as using cream but many people use water so you will be way up the scale from that. If your intake of fat ever becomes an issue you can try using flavored water for a unusual but very good taste. Almost any liquid will work

You can certainly use it. It has a higher fat content than milk, and a lower fat content than heavy cream; if this matters to you, take it into consideration.
