The perfect omelet is made with 2 eggs, not 3. You also add 2 tsp of water (never milk) and 1 Tbl of Worcestershire sauce. Beat with an electric mixer.
In an omelet pan, heat 1 Tbl of olive oil. Saute mushrooms and ham. Add chopped tomatoes and then the egg mixture. Add freshly ground pepper to taste.
Cook on low, moving the edges in to cook bottom of omelet evenly. Flip over and add a sprinkling of grated cheese - I like Asiago and Jalapeno Jack.
Fold over and serve :-)

I like to make mine with chicken, fresh mushrooms, white cheddar cheese and fresh thyme. The ingredients taste incredible together.
I think fresh herbs really make the difference. I also use basil, cilantro, etc, depending on what flavor I'm going for.

I warm up the omelet pan and put in some butter mixed with a little oil, allow it to become pale brown and then slide in your eggs .... it gives a nutty flavor to the omelet ....
... and don't do without salt....
I like omelet plain or with fresh herbs ... those I find wonderful

in the egg mix itself, I put... salt, pepper, garlic powder and a little dash of Worchestshire sauce... Then once that sets in the pan, I add a combination of veggies, meat, cheese, etc... Spinach is great, ham, cheddar cheese...

McCormick Season-All for taste. Other than that, mushrooms, bacon, diced onions, green onions, cheese... pretty much anything ya like?!

Lots of garlic and salad peppers, then sprinkle with mature cheddar and bubble under the grill 'til browned. Mmm.

My favorite omelet is made with egg substitute because it "scrambles" better. Toss in some chopped turkey, hashbrowns if I've got them, and chopped tomatoes and cilantro. I then serve it with sour cream. Love it.
