And should the coffee grains be course or fine?

The directions the press came with and the saleslady both say to bring the water to a boil then let the water cool before pouring it into the press. Doesn't make sense to me. Why boil it if you have to let it cool down?

I swear by my coffee press! Cool down? I've not heard of that. You should let it steep four minutes before plunging. Since you are letting it steep course grounds are perfect. Four minutes is just right. Good luck.

I've used all kinds of grinds in my press, and they seem to work equally well except for the super-fine ground coffee. Seems to seep out into the actual coffee and makes it chalky.

As for boiling the water, you do that to get it good and hot so that it'll actually extract the flavor from the coffee. Same reason you boil water for hot tea. getting it really, really hot works OK too, but not as well as boiling it.
