Half way?
How are you going to be able to tell it's half way? You might have 2.35 gal. and 1.3 gal. You would just be estimating. May as well just say fill the 5 gal. bucket 4/5th full.
Back to the my question, how can you tell you filled a bucket exactly half way?
tlbs101 has it the best method so far - outside of buying a 4 gallon bucket.

Fill up the 5 gal bucket and pour it into the 3 gal bucket. you will have 2 gals left in the 5 gal bucket. Pour out exactly 1/2, then pour the contents of the 3 gal bucket back into the 5 gal bucket.

Everyone else made this WAY too hard.
Fill each bucket half way.
Empty the contents of the half filled 3 gallon bucket into the half filled 5 gallon bucket.
1.5+2.5=4
