Good for you. It's hard to find recipes that are tasty and healthy, despite what the tv cooks show you.
Try replacing the pasta and potatos and rice and such with another vegetable.
There is nothing that says you can't have a lean turkey burger patty with grill carrot sticks instead of french fries. The carrots come out rather sweet that way. Try dicing some fresh tomatos on top of the burger patty instead of ketchup, or use mustard only, it has zero calories and is loaded with taste. IF you can't give up the french fries, try mustard with them.
Also, try making ethnic foods which don't rely so heavily upon these starches, such as tacos with whole wheat tortillas or chinese stir fry more than just occasionally.
Such as Spaghetti squash instead of pasta, with meatballs and some sauteed tomatos and mushrooms instead of full on sauce.
Replace the bread crumbs that you use for breading with finely crushed chicharillos (deep fried pork skins) they actually have no carbs and the amount you would use make them low in calorie also.
Potatos are a hard food item to replace, they are so versatile .

I have the same problem with trying to decrease the amount of carbs I feed my family. My favorite kitchen tool is the crockpot. You don't have to use oils and it seals in the natural juices of meats such as chicken which you can then use in a soup.
I like to cook country style pork ribs in mine. Instead of a bbq sauce, I use a rub that has no salt. I use the left over for dinner the next day in potatoe skins topped with a low-fat cheese. The skins are high in potassium. I save the insides of the potato for potato soup.
For my potato soup, I use chicken stock and 1c lowfat milk, fresh kale, a hot sausage, and 1c of the potato
Another thing I use a lot of is whole wheat tortias. I make breakfast burritos, wraps, etc.
One of my fav. recipes is chili. Instead of a tomatoe soup base, I use 1 can low sodium chiken stock, 1 can black beans, 1 can hot diced tomatoe w/ chillies, 1lb of ground turkey. I served it with tortia chips made from the whole wheat tortias, a sprinkle of lowfat cheese, and low-fat sour cream.
This thickens up the next day and I will serve it in a wrap w/ lettace and tomatoes.

Lemon Pepper Chicken, serve with rice or stuffing
INGREDIENTS
6 skinless, boneless chicken breast halves
1 teaspoon lemon pepper
1 pinch garlic powder
1 teaspoon onion powder
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place chicken in a lightly greased 9x13 inch baking dish. Season with lemon pepper, garlic powder and onion powder to taste. Bake in preheated oven for 15 minutes.
Turn over chicken pieces and add more seasoning to taste. Bake for an additional 15 minutes, or until chicken is cooked through and juices run clear.
instead of all the starchy stuff, make mixed veggies, applesauce, salads, baked beans, and fish is always a healthy bet. but some starchy is ok.

Additional:
on the back of the success rice, there is a recipe for a cheesy chicken and rice bake, it has veggies mixed in the rice and it tastes great. or make baked chicken with stuffing covered in cream of mushroom soup.

Chicken and Rice
Saute chicken breasts
about three to four
in extra virgin olive oil till done
take out of pan
then in same pan add
Chicken broth or stock
one of the boxes or two cans
Add 2 cans of cream of chicken soup
mix well add about two to two and 1/2 cups of rice
mix well cook for about 15 min stir often About half way through put the chicken back on top of it serves about 4 people.

I'm really into low fat, low cal healthy cooking. About a year ago I got a George Foreman grill and I cook on it about 5 nights a week.
Our favorite is a standard grilled chicken salad. I grill some boneless chicken breasts on the grill with some Tony Chachere's Cajun Seasoning ( mo' hotter, mo' better!), then I cut the chicken into thin strips and put them over a bed of lettuce and whatever other veggies you want in your salad. (I grill mushrooms for my salad and onions and peppers for my honey's.)
Top it off with some Fat Free Raspberry Viniagrette. The sweet of the dressing balances with the spicy chicken.
You could also do grilled lemon chicken over roasted diced tomatoes with melted Muenster on top.

We use a lot of fish in our house. Usually we serve it with rice (white, brown, pilaf, etc.) and a fresh or frozen veggie. We usually don't put any butter on the veggies - but we do use salt, sometimes a little lemon juice adds a nice kick.
Instead of pasta, try anotehr starch - like rice, or something like squash even!

I have two crowd pleasers:
1. Lettuce Cups. set up individual bowls of chicken, pork, water chestnuts, pineapple, soy beans, rice noodles, carrots, other veggies, WHATEVER you like! Include a plum sauce (try Soy Vey) or chinesse chicken salad dressing for dipping. light and crispy! great alternative to a salad!
2. Dirty rice. If you do not want to make it home made try Zatarans is the best and easy to make. only i add extra rice and corn to cut the saltyness of the spices. slice up your favorite Kelbasa or pork chop and mix. serves up nicely and smells great!

Make meat loaf with Ground Turkey.
2#'s ground turkey
1/2 red pepper
chopped scallions
2 eggs
1cup italian bread crumbs quickly soaked with milk and added.
1tbsp. mustard
2tbsp. ketchup
salt and pepper
mix and mold
cook 1 hour and 45minutes on 350 degrees
IT IS EXCELLENT!!!!! AND HEALTHY FOR YOU!!!!
HAVE WITH- cooked baby carrots and white rice boiled with chicken broth.
