If the bullet is going 2000 feet per second, it is very difficult to capture. Two issues, when to release the shutter, and what shutter speed is needed.

A photocell or other triggering device could release the camera shutter.

As for the shutter speed:
2000 ft/sec, if you had a 1/8000 shutter speed, the bullet would still travel 1/4 of a foot or 3 inches. You might need a special camera. Another technique would be to pan the shot at the speed of bullet. A rotating mirror shot would be easiest, then you could use almost any camera. I used a rotating mirror in physics class in college, they could help I'm sure.

A stobe flash might do the trick as well, but it would have to be extremely fast.

A bullet travels at often well over 1000 feet per second, so even if you had a shutter speed of 1/10,000 of a second, the bullet would still be blurred over an inch. No regular consumer camera has a sufficient shutter speed. I think the highest are around 1/4000, some are 1/8000.

Usually when you see photos of bullets, it's a test setup with an automatic electronic trigger and a very high speed flash. The shutter speed is slower, but the flash duration is very very fast (and bright). So, the shutter speed isn't that important any more and nearly any good camera will do (provided it has manual controls, manual focus and remote shutter capability). The trick is the set-up and the very bright and quick strobe light, like a EG&G Model 549 (no longer made) timed to the bullet position. Not an easy feat.

There are specially designed movie cameras that can take 8,000 and 12,000 frames per second, with extremly high shutter speeds. They are obscenely expensive.

Any camera will do, just have someone shot a gun directly at you and you just point your camera and start clicking away.
