I'm going to make homeade BBQ sauce today and I had a couple questions.

1. The recipe says that I can use ketchup, tomato paste, tomato sauce, salsa, tomato juice or dried tomatoes. I don't have very much ketchup left. Can I use canned stewed tomatoes?

2. How many cups of chopped onion does 1 onion make?

First of all,unless you have a very lg. onion you need apprx. 3
med. ones chopped to make a cup.
About the tomatoes....you could likely used the canned stewed tomatoes but I would drain them very well first and if the chunks are fairly big,I would crush them more and drain again. Just add some extra spice to male up for the flavor loss by not using ketchup.

1. Yes, stewed tomatoes works very well. You must drain the liquid and puree the tomatoes. Put the tomatoes in a sauce pan and cook down with sugar and salt to taste until it is the consistency you like. Also, paprika gives the sauce a smokey flavor. Add other spices like minced garlic, Tabasco, powdered onion, salt etc. The fun thing about BB sauce is that you can experiment and try different things. Example would be to put a little apricot preserve to give it thickness and sweet flavoring instead of sugar.

2. Depends on how big the onion is. It probably does not matter if you have more than a cup. If you like more use more if you like less use less.

You do realize not all BBQ sauces have tomatoes in it
I have had a few guests who cannot have tomato or tomato products such as ketchup
Yes stewed tomatoes
or even real tomatoes work well
do add a small amount of vinegar and some spices and things like a bit of garlic
an overage onion is about one cup of chopped onion

I don't think i'd want salsa or stewed tomatoes in my sauce...they contain tomato pieces and they would be too chunky to go smooth on the meat your'e trying to cook. check out this site (www.recipezaar.com) and type in barbecue sauce, see what comes up and scan a few recipes that interests you. I'm sure you'll find PLENTY of better ones there.

Sure you can use those....but add some molasses or brown sugar to add sweetness.....depends on size of onion..one medium onion basball sized will yield around 1 1/2 cups chopped..... if you want a smoother sauce then blend or use an immersion blender.....Chef D..
