Iraqi food is quite different from other Arab countries. "Dolma" is a famous Iraqi dish. It is made of different vegetables that are stuffed with meat, rice and certain spices. The vegetables usually include onions, grape leaves, green peppers and tomatoes.

"Pacha" is another dish made using the head of lambs. This dish is very difficult to make and includes the brains, eyes and tongue.

"Tishreeb" has a wide variety of meanings and includes any dish that is based on broth and bread. For example "tishreeb laham" (laham means meat) is pieces of bread soaked in meat broth and is topped with pieces of meat. "Tishreeb bagilla" (bagilla is a sort of bean) is pieces of bread soaked in the broth used to boil the beans and topped with the beans. Lemon juice is usually pored on top to give flavour.

"Qoozy" is a dish usually made in a large tray and includes rice that is cooked using lots of different spices. The spices cause the rice to become yellow in color. Then the rice is topped with lamp meat.

Now the word "marga" means sauce. Any marga can be made using different vegetables, meat and tomatoe paste. For example:
"Margat bamya" means the sauce of okra. It is made by frying garlic, then adding the okra, meat and tomatoe paste. Some water may be added to thin the sauce.
"Margat fasooliya" means the sauce of white beans. It is made in the same way, except using onions instead of garlic. All "marga"s are served with white rice.

"Kahy w geimar" is a food eaten for breakfast. Kahy is a type of pastry that is found in bakeries. It comes in rectangular shapes. Geimar is very similar to breakfast cream, but much fresher. Scoops of geimar are placed on top of a piece of kahy, then a certain type of syrup is added on top.

"Minnilsima" is a type of sweet. It is made by using a certain type of glue that is produced by a special tree, found mainly in Iraq. The glue is processed and many ingredients are added to it (flour, nuts..etc) to make small round pieces of sweet. The pieces are usually packed in a box of flour to keep them from sticking to each other.
