Cheeses taste good because they have flavor compounds that come from the milk, the microorganisms used to make the cheese, and sometimes from add-ins like peppers or smoke, etc.

Many cheeses contain naturally occuring chemicals called glutamates that are known to deliver the taste sensation of umame. Umame is one of the 5 tastes (along with sweet, sour, salty, and bitter). It is described as savory. It is also found in mushrooms, tomatoes, some seafood, etc.
