Jacket potato personally I would bin it.
Rice. Very dodge to keep. Again personally I wouldn't keep that more than 24 hours and then heat it past 75 degrees for at least 5 Min's it is one of the worst things for food poisoning
Boiled spuds three days heat them up as above or as soon as they are cool make a potato salad with them
Sausages three days
Omelette's. Why would you want to keep one? would it not be really rubbery.

Rice dishes generally months vacuum packed.

Please note: A lot of people posting here are misinformed. The fact is that food can be kept up to 300% longer than what people think in the fridge that keeps it cool enough. Let's take a Prawn Mayo sandwich for example. It will not become dangerous IN the open IN a warm enviroment usually until the 4th day. The chance of getting "food poisoning" is around 34% at that stage. This is in an area where bacteria can flourish much better.
Buy a sandwich from a shop, that has "Use by:" set for the next day. Put it in the fridge, leave it for 2 weeks, and I assure you it will be edible (a different taste, however). The reason why things have a useby date is because of the slight increase of danger after that date, but it doesn't become notable until much longer. I'd suggest some people do some reading on Ascorbic Acid too, to help them understand the interactions between food. In summary, people are obsessed with health, yet the potential to get ill for keeping things more than recommended is smaller than people think.
1 day to bin a jacket potato in a fridge is ridiculous, as is rice generally after 3 days. A cooked potato is way more sturdy than people think, and will last way longer than expected.

you can keep things you have cooked in the fridge for about 3 days. baked potatoes you can reheat as you can get food poisioning.
you can keep anything in the freezer for as long as you like as the freezer freezes the cell by date

Rule of thumb for most non-preserved foods is no more than 4 days refrigerated! Sausages have preservatives in them and can be frozen indefinitely. If you are freezing most items, then the shelf life is longer, anywhere from 3 months to 1 year.

Everything bar the omelette should be fine in the fridge (air tight container) a week and should be fine in the frezzer for 4-6weeks not sure about the omlette coz if its been frozen when i defrost it may all separate!
