It really depends on who you are wanting to converse with. If its family I would stay clear of most forbidden subjects and only talk to the most trusted - family gossip can be the worse. Even divide a family. You just don't get to choose your relatives. If its a new girl friend, the subject will be easy, you should be able to talk about everything in the beginning and get a good take on her thoughts on most topics.

There is no such thing as a forbidden subject, just appropriate time and place (this includes the actual people/person you are talking to). So, find the appropriate time and place. I admit that some things really don' t have an appropriate time and place unless it is with co-conspirators, your lawyer, your priest, or a prison cell.

It depends on the situation.
At church, you should not talk politics.
In mixed company you should not talk about sex.
When talking to an officer of the law you should stay away from topics such as drugs and tax evasion.

If you have peace within you regarding the subject then you will be comfortable in discussing it. so first understaertand it ver well and itellectualize before you start talking about, you can talk in a formal way.
