It's a very old tradition. It certainly created great respect. Some thought it was due to the fact in the days when a voyage could last 5 months or more. without site of land the ship was, life, hope and promise.
Wouldn't she represent a woman. What else has such significance for a man. Good or Bad, this girl is what ya got!
Nother thought, a sailor loved his ship.

Interesting answers. Planes and ships are predominantly operated by men historically. No two planes or ships are exactly alike, even if they follow each other off an assembly line. Each one has its own "personality", if you will. It responds to a man's input in its own special way, and every once in a great while you get hold of one that is just flat unmanageable. Now what does all that describe more than a woman? These machines remind us of women. Simple as that.

To a man a plane or a ship is a thing of beauty, just like a woman. They are powerful and graceful. They can stop and make us stare. Life is useless without both.

Men mostly will preform work on the boats/ships, so this is quite possibly the reason why they give endearing names to the boats/ships. Reminds me of how men give women's names to their cars or refer to their cars with words such as "she" or "her".

I agree with Ray.
Because you have to treat them like a lady or they will act up and cause havoc.
People have offered all sorts of explanations, including, for naval vessels, "Because it costs so much to keep them in paint and powder."

Probably because when planes first came about it was mostly men who flew them.
