My boyfriend did this for me...
Seasoned chicken on angel hair pasta and a southwest style salad.
He just bought the preseasonsed chicken in the meat section, but if your grocer doesn't do that, you can buy some chicken breast and then use a marinade of your choice from the salad dressing aisle. If you cannot find one that you think works a very simply, yet flavorful one is...
Olive oil
Oregano (just a pinch or so)
Salt
Pepper
Lemon Juice
Mix all together, and using a cooking "paint brush" paint the chicken with it.
If you get a premade marinade then just take a gallon sized freezer bag and toss the chicken in it. Using a pan (and some Pam or oil so it doesn't stick), you can grill it or if you have a grill that's even better. I like to add a little marinade to the chicken once it's cooked to give it a kick. I also brush it with a teeny bit of olive oil to make it a bit moist. (When I say teeny, I'm talking like half a teaspoon if that). I like to cut my chicken into long strips to top the pasta with. Of course boil the pasta a little before the chicken is done so you can serve it all warm.
Southwest salad:
Prebagged greens
Canned sweet corn
Canned black beans
Sliced carrots
Honey mustard dressing or ranch
Mix all the ingredients together!
I hope this wasn't too confusing... it's a very good dinner and pretty easy to make!!

Well without a doubt you should make her some good comfort food if she is in need of cheering up! The best idea, I think, would be to take a favorite meal she has (either home cooked, or from a restaurant) and try to replicate that. It will show how much thought and effort you put into the meal!
Without giving any specifics of what she likes though, or what you have, it's hard to give ideas. I'm sure she will be happy with whatever you make, because cooking for someone is such a nice gesture!

Here is a good meatloaf recipe(not your normal meatloaf) Serve with a baked potato & vegetable or bread & lots of laughs & smiles. :)
Mix in big bowl:
2 lbs hamburger ( for variety use 1/2 sausage)
2-3 eggs
3-4 slices soft bread crumbled very small
1 Tbs Italian Seasoning
1 teas minced garlic
1/2 onion chopped
1 small can sliced mushrooms, drained
1/2 teas salt
1/4 teas pepper
1 Tbs Catsup
1 teas mustard
3 Tbs Chili Sauce
Mix well & scoup out onto a piece of foil about 20 inches long. Push meat mixture to be about 1/2 - 3/4 inch thick x 10 inches wide x 15 inches long. Sprinkle meat with shredded cheese(I use the Italian 4 cheese kind & Parmasian) I may even add some more Italian Seasoning. In a wild mood I will add black olives also. Or Pepperoni. Start at one end on the width side & roll up like a jelly roll. (I find it easy to just pick up the foil & push it down in place & roll. When you get to the end, push sides down to seal cheese into the middle. Set baking dish beside meat & roll into baking dish seam side down. Bake at 340 for 35 minutes or until cheese starts to ooze out. Remove from oven.
In bowl mix well:
4-5 Tbs Chili Sauce
1/2 teas mustard
2 1/2 Tbs brown sugar
1 teas margarine
Pour over meatloaf as a glaze
Return to oven for about 15 minutes

Buy the most expensive chocolate packed dessert that you can find. Talk to the woman behind the counter and tell her you are looking for a chocolate fix to cheer your girl up. All women know this works. Science is just starting to be able to explain why.
Chocolate fondue to start off the evening isn't a bad idea either. Chocolate dessert at the end of the meal. You are golden. It really won't matter what you serve in between.
PS the most expensive chocolate has the purest chocolate which has the quickest, longest lasting, and most satisfying effect on the emotional scale. Godivas are a good middle priced suggestion. Godive chocolate mousse or Godiva chocolate fondue....mmmmm

Champagne goes well with chocolate.

Hi, I don't know your level of cooking or her likes in food,but, I know that carbs are a comfort food. I would suggest cooking something simple and foolproof. How about Lazagna. Buy a box of Lazagna noodles at the supermarket. The recipe is on the box. It is very simple. Riccotta and mozeralla cheese comes in low-fat if she is health conscious(you don't want to make her feel worse) Pick up a jar or 2 of tomato sauce, I would recommend Francesca Rinaldi. Only boil the noodles(add 1 tablespoon of cooking oil to the boiling water ) until they are pliable(2-3 minutes). Drain and place in cold water until they are cool enough handle. now..you can do the traditional layering (1 cup sauce - 1 layer noodles - one layer cheese mixture -1 cup sauce- 1 layer noodles - 1 layer sauce. cover with aluminum foil and bake 350 for 30 to 45 minutes. or...my favorite ..take a lazagna noodle out of the cold water and lay it out flat. take the cheese mixture(1/4 cup) spread it on the noodle evenly and then roll it up like a jelly roll. place in a pan that is covered with sauce. repeat until the pan is full(single layer). cover with sauce and bake the same way as the traditional layered lazagna. Now you can serve italian bread and a good wine with this, but, for desert..make something very chocolate . you can go to the desert section of the store and find a very chocolate and light desert, like chocolate mousse. or go to a bakery and get something there. or try the no fail, feel better quick ..chocolate ICE CREAM.

Roasted Quartered Chicken and Shallots
Prep: 5 minutes Total: 55 minutes
Serving: Serves 4
1 Tablespoon unsalted butter, softened
4 Pounds chicken quarters, skin on
Coarse salt and freshly ground pepper
4 large shallots, peeled and halved lengthwise
Directions
Preheat oven to 450 degrees. Lightly brush a rimmed baking sheet and the chicken pieces with butter. Lay chicken, skin side up, on sheet; season with 2 teaspoons salt and the pepper.
Roast chicken 20 minutes.
Remove from oven. Carefully arrange shallots, cut side down, around chicken; season shallots with salt and pepper.
Return to oven. Continue roasting, basting chicken occasionally with pan juices, until an instant-read thermometer inserted into thickest part of the thigh (avoiding bone) registers 165 degrees and shallots are tender and caramelized, about 20 minutes more. Transfer to a platter; loosely tent with foil. Let stand 10 minutes before serving.

Dont know how much of a cook you are.
but i'll stick to the basics
Spaghetti bolanase (dont know how to spell)
mince meat
onion
kidney beans (optional)
jar of dolmio (with mushroom maybe)
and some long spaghetti.
Brown the mince and onion
Add the sauce and kidney beans
Leave to simmer
When ready to eat
cook the spaghetti
Add cheese on top if both like. Yummy and easy peasy.
Add a bottle a cheap plonk.
Every body's happy :-)

It depends on what her favorite foods are. No matter what though, it's the preperation more than the dinner that is going to please her. Set up a candle lit dinner for 2 complete with flowers. That will mean more to her than the actual dinner. You can make spaghetti, steak and baked potatoes, lasagna, even hot dogs and mac-n-cheese! Make sure you have a nice dessert picked out though. Try making Strawberry shortcakes with ice cream and canned whipped cream, not redi-whip. When that is done, run her a warm bath with her favorite fragrance in there whether it be bath salts, beads, or bubbles. Then give her a back and foot massage. If she just isn't in heaven with all that, dump her and call me!

If she likes Italian, I say Chicken Marsala. It is super easy, but it looks like it took all day.
You need:
2 large or 4 small chicken breasts
1/2 cup plus 2 tbsp. all-purpose flour
3 tbsp veg or olive oil
2 tbsp fresh lemon juice
1/4 cup chopped green onions
1/2 cup marsala wine (located with other cooking wines, not with the vinegars)
1/2 cup chicken broth (canned is obviously easier)
1/2 cup sliced white mushrooms (more or less depending on preference)
Don't quit on me yet! It seems like a lot but it really is easy.
First, coat the chicken in the 1/2 cup flour. Cook them on medium high heat in a pan with 2 tbsp oil. Turn them often so they don't fry too much. You want them a nice light golden brown. Once the chicken is done, remove and place on a platter keeping them warm ( I cover with paper towel and put in microwave No Heat until I'm ready for them). Meanwhile, add the last tablespoon of oil to the pan. Add onions and mushrooms ( I add a little garlic too). Saute until tender (about 5 minutes). Next, add the 2 tbsp of flour whisking around with the onions and mushrooms just until the flour is absorbed. Add the wine, broth and lemon juice to the pan and whisk around until it begins to thicken (about 8 minutes). Last add the chicken to the sauce in the pan and allow it to heat up and absorb the sauce. Ta da, you're done! Top the chicken on the plate with a bit of the sauce. You may like to serve this with a steamed veggie or just salad. It is quite filling.
By the way, I think it is very chivalrous of you to want to cook to cheer her up--kudos

I'm not sure of her or your likes and dislikes but I'd go ahead and do something simple like ; How about a nice steak "Q'd" up nice and juicy in a picnic type setting? With all the trimmings. Baked potatoes and any veggies with some ice cream to top off the meal. And don't forget "Roses" they're always a fun cheery gesture!!
