Here is one that I use when I am just to tired to make something fancy
Clam Spaghetti
You will need
1 can of chopped clams
1 tablespoon of Olive Oil, Butter or just Oil
2 tablespoons of garlic fresh or dry (fresh is better but I know that it can be a pain and not always available)
4 tablespoons of Onion
Parsley or other herbs
Salt
Pepper
Pasta
Water
1. Start by boiling some water
2. If you are using fresh garlic chop it finely (if you are using dry garlic and or onion skip to step 7
3. Chop your onion finely
5. If you have some parsley or other herbs chop them finely and put them on the side
6. Heat a pan and add the oil garlic and onion
7. Once the garlic and onion has started to smell nice add the clams and the liquid from the can
8. Reduce the clam mixture until it is almost dry
9. Turn off the heat and add your salt and pepper. You will need to do this to taste. Put some in and then taste it… the mixture should be slightly salty alone as it is going to be mixed with the pasta. (if you are using dry garlic and or onion add a teaspoon of each now)
10. Boil your pasta
11. Strain your pasta
12. Put the strained pasta into the pan with the clam mixture
13. Mix the clams and the pasta with the parsley / herbs
14. Taste the pasta… THIS IS CRITICAL… If it needs more salt or pepper put it in
This pasta goes very well with some garlic bread that can be as simple as putting some chopped garlic and butter on bread and putting it in the oven.

You cant go wrong with a Roast Joint Of Meat and Vegetables.
Heat the Oven for 10 minutes,
Then place the Meat ,Beef ,Lamb , Pork,,Chicken
in a deep Roasting Dish, and Cook for 20 minutes for each Pound, and 30 minutes Extra. 45 minutes for each Kilo and 30 minutes extra.
When Meat is half done please turn over Meat and Cook other Side.
In Pot of Boiling water Place two washed Potatoes per Person and Cook for about 10 minutes, and when 20 Minutes is left for Meat to be Cooked Place Potatoes in with Meat and have Roasted Potatoes.
about 20 Minutes before Meat is Cooked wash youre Vegetables,Asparagus, Bruxelles Sprouts, Carrots. or Combination of the lot , Or what Vegetable you Like. Then Cook in Boiling Water until Tender for 10 -20 minutes.
When Meat is Cooked leave on Platter for 10 Minutes before Carving to settle it.
Serve with wine of youre Choice,A nice Californian Julio Gallo Red or if Chicken A White Wine. Bon Appetit et Bon Degustation. Dont Forget the Bread Rolls to mop up the nice Juices. Good Luck.

My family love this recipe. If he likes pork and beans this may work!
Hungry Boy Casserole
1 c chopped onion
1 pound ground beef
1 can pork and beans(15 oz)
1 c favorite bbq sauce
1 can refrigerator biscuts(with 10 in the pack)
brown meat, add onion simmer till onion is cooked. Add beans and sauce, heat till bubbly. pour into an oven safe dish, top with biscuts and bake as directed on the biscut can till they are golden.
Kinda like a sweet version of chili. If you wanted to use those "grand" biscuts I guess you could if you used 2 cans. They just need to cover the casserole. I usually make it in a cast iron skillet so I dont have to transfer it.

Enchiladas (homemade), Spanish rice (box or packaged), and refried beans (from can - i like to taco bell kind)
Enchiladas
1 large Shredded chicken breast (buy one already made or cook it yourself
corn tortillas (use about 8 or until you run out of chicken)
chili powder
minced garlic
cream of chicken (can use 1 can but 2 gives more sauce)
jalapenos (cut stems off) (3 medium)
chopped onion (as much as you like)
shredded cheddar cheese (I use about 1 1/2 cup)
Sprinkle garlic and about 1 tsp garlic on chicken and toss.
Fry each tortilla is small amount of oil until slightly toasted
Put chicken in center of each tortilla and roll them. Place seam side down in baking dish
For sauce boil jalapenos until soft. take out seeds (leave some if you want it spicy). Chop and stir into cream of chicken. Pour mixture over rolled tortillas.Sprinkle with chopped onion and shredded cheese.
cook about 20/25 minutes @ 350.
can substitute ground beef. The only way to mess this up is to make it too spicy. so take out most of the jalapeno seeds and lightly sprinkle chili powder.
I also a little water to make the cream of chicken easier to heat.

1lb. ground beef, 1/2 onion, 1 can of butter beans, 1 can of kidney beans, 1 can of pork and beans, 1 tbs. vinegar, 1/2 cup brown sugar, 1 cup Ketchup and a slow cooker or oven.
Put the onions in a frying pan and cook them. Add ground beef, cook till brown. Put this into a slow cooker or into an oven safe caserole dish, drain and add the butter beans, kidney beans (partially drained), the pork and beans, the vinegar, brown sugar and ketchup and cook on high for an hour or cook in the oven at 350 for one hour. It's great food. You can eat it as it is, put it over a bed of lettuce with some cheese and have salad, pour it over taco chips and eat it as a dip or nachos. It's been a big hit with most people who have eaten it and is quick, easy and nearly foolproof.

Mashed potatoes w/ sauteed meat.
Mashed Potatoes:
Okay first buy some potatoes (preferably some russet potatoes) peel and cube and put in a pot of boiling water. Boil till potatoes are fork tender. Drain potatoes, add salt, butter, and milk mash together till you get a good consistency.
OR buy a bag of instant mashed potatoes and follow the directions.
Sauteed Meat:
Buy some fajita meat. Slice into strips.
1 small tomato cut into small chunks
1/2 red pepper cut into slices (remove and discard seeds and stems from both red pepers)
1/2 green pepper cut into slices
1/2 medium onion cut in slices
Sautee everything except in a pan with some oil (olive oil, corn, or vegetable oil).
Remove from pan and add meat. Season the meat with some salt, pepper, paprika, and garlic powder. Cook till almost done and add the veggies to it. Cook till done then serve with the mashed potatoes.
On the side you can make a salad. Buy one of those bags of pre cut/washed lettuce add some chopped up tomatoes, carrots, and cucumbers and serve w/ his favorite dressing on the side.
Don't forget to add some dinner rolls you can buy pilsbury in the can and make them in the toaster oven.

buy already made dough by Pilsbury. cut them in about 3 x 5 in. rectangles. then fill them with pizza sauce, shredded cheese, pepperoni, and any other pizza toppings you like. roll them up like a burrito and cook in a 350 degree oven for 25-30 minutes. serve with salad and cucumbers, and iced tea. good luck hope you get to watch the basketball games. roasted chicken.
1 whole chicken
1/2 teaspoon poltry seasoning
1/2 tablespoon italian seasoning
2 tablespoons butter
1 teaspoon garlic powder
rub butter on chicken with fingers
mix seasonincs together, sprincle on chicken, make stove top brand stuffing,
as directed on box exsept dont cook it( let stuff get moist,then stuff it in the open end of the chicken cover with aluminum foil bake at 325 for 30-55 min depending on size of bird.
mash potato's
make accoding to box (any brand in the box) subsitute chicken stock (a can of chicken broth) some salt and peper to tast.
