i need quick easy meal ideas. i'm so tired of the same old thing. can you help?

A source I love for weeknight dinner ideas I love those Kraft magazines. They are quarterly, and free. Just opt into it.

what does your rut consist of? maybe a nice veggie sand-which would be quick and easy.

What is your same old thing? I like Mac & Cheese with ketchup. A cheese and salsa quesadea is good too. Fruit salad is a good booster.

The first two recipes are from my Southern Living Ultimate Quick and Easy cookbook. Both take less than 30 minutes total, including prep. time, and both are VERY good! The others are from various sources, and are recipes I've found through the years. Enjoy!

Pizza Pinwheels

1 (11 oz.) refrigerated pizza crust (the pop out of the can kind)
1 (3.5 oz.) package pepperoni slices, chopped
1 cup mozzarella cheese
1/3 cup grated parmesan cheese
1/2 cup spaghetti sauce or pizza sauce

Preheat oven to 400 degrees. Unroll pizza dough from can and flatten to a 12 X 9 rectangle. Spread the chopped pepperoni, mozzarella cheese and parmesan cheese evenly over dough. Beginning at the short side, roll up tightly. Brush a bit of water on the other end and seal dough. Cut into 1 inch slices and place a few inches apart on a lightly greased cookie sheet and flatten slightly. Bake for 12 - 15 minutes until golden.

Remove from oven and serve with the warm pizza sauce that you've microwaved. :)


Chicken and Three Cheese French Bread Pizzas

1/2 cup butter, softened
1/2 cup shredded cheddar cheese
1/3 cup Parmesan cheese
1 - 2 cloves garlic, pressed (or minced)
1/4 tsp. Italian seasoning
1 - 16 ounce loaf sliced French bread
1 1/2 cup cooked chicken, chopped (or one large can of chicken)
1 cup shredded mozzarella cheese
1/4 cup chopped red bell pepper
1/4 cup chopped green onions

Combine first five ingredients in a small bowl. Spread evenly over bread slices. Top with chicken. Sprinkle with mozzarella cheese, bell pepper and green onions. Bake at 350 degrees for 10 minutes or until cheese melts.


Meatloaf

1 1/2 lbs ground beef (I like chuck)
1/2 cup crushed Ritz crackers
3/4 cup shredded sharp cheddar cheese
1 (1 1/4 ounce) package dry onion soup mix
1/4 cup ketchup
2 tablespoons A-1 Steak Sauce
1 tablespoon Worcestershire sauce
1 egg
2 slices bread

Preheat oven to 350 degrees.

In a large bowl, mix all ingredients except bread slices together thoroughly.

Line bottom of loaf pan with the sliced bread. (This will help absorb most of the grease that cooks out of the beef.)
Press meatloaf mixture firmly in the loaf pan and bake for about an hour, or until done.


Chicken and Wild Rice Casserole

1 (6 ounce) package long grain and wild rice blend
4 cups chopped cooked chicken
2 (10 3/4 ounce) cans cream of chicken soup
1 cup mayonnaise
2 teaspoons curry powder (or to taste)
1 (8 ounce) package pepperdige farm cornbread stuffing mix
1/4 cup butter

Preheat oven to 350 degrees.

Cook rice according to package directions and spoon into greased 2 quart casserole dish. Layer chopped chicken over top of rice.

Mix soup, mayonnaise and curry powder and pour over chicken.

Top with dry stuffing mix and dot evenly with butter.

Bake for 30 minutes, or until bubbly.


No-Peek Beef Casserole

(Not sure why this one's called a casserole as it's more like a stew. I serve it with egg noodles.)

2 1/2 lbs stewing beef, cut into bite-size chunks
1 (1 ounce) envelope dry onion soup mix
1 (10 1/2 ounce) can cream of mushroom soup
1 (4 ounce) can sliced mushrooms, drained
1/4 cup tapioca (optional)

Combine all ingredients thoroughly and place in slow cooker. Cook on low for 10 hours. Serve with rice or noodles.
