I want to make broccoli and cauliflower cheese for my tea. I bought a mix sauce but it contains eggs and I'm severely allergic to them. Every other mix sauce I can find all contain eggs as well, have any of you out there got a recipe for a cheese sauce that I can make that doesn't include eggs.

My mom always melted Velveta over broccoli. Trashy but delicious! ;)

Or, try this one:

NGREDIENTS

* 2 tablespoons butter or margarine
* 4 cups milk
* 1/2 teaspoon minced garlic
* 1/2 teaspoon minced onion
* 1 tablespoon cornstarch
* 1 tablespoon cold water
* 16 slices American cheese

DIRECTIONS

1. In a medium saucepan, bring butter, milk, minced garlic, and minced onion to a low boil, stirring frequently. Dissolve cornstarch in 1 tablespoon water and whisk into milk mixture. Continue stirring vigorously until desired thickness.
2. When milk mixture is thick enough, tear cheese slices into pieces and slowly stir them into the sauce, melting gradually, until desired cheesiness. Serve over your favorite pasta, vegetable, or side dish.

It doesn't get much simpler than this one. CHEESE SAUCE Makes 250ml INGREDIENTS 35g of mature Cheddar cheese 1 tablespoon of butter 1 tablespoon of flour 250ml of milk Ground pepper to taste METHOD Grate the cheese. Put the butter into a saucepan on a medium heat. Melt the butter. Add the flour and cook for a minute, stirring all the time. Take off the heat. Add the milk a bit at a time. Stir each time to make sure it is smooth. When all the milk has been added, put the pan back on the heat. Bring to the boil. Keep stirring. Turn down the heat until it is just boiling (simmering). Cook for 2 minutes, stirring all the time. Take off the heat. Add the cheese to the sauce and mix. Continue to stir until the cheese has melted into the sauce. Season with the pepper. ADDITIONS AND ALTERATIONS If the sauce is too thin, add a little bit more flour. If the sauce is too thick, add a little bit more milk. Don’t forget that adding more cheese to improve the flavour will also thicken the sauce. Use other full flavoured cheeses. Use ready grated cheese. Add 1 teaspoon of whole grain mustard. TIPS The trick is to keep stirring.

Spoonful of self raising flour.
Dab of butter.
Heat, make a roux. Add milk and stir all the time. Bring to the boil. Lower the heat, bit of garlic salt, add grated cheese and allow to melt into the sauce. You can shallow fry some onions and add the mix to get a nice burnt onion flavour. Not an egg in sight! Quantities are as you want to make the sauce thick or thinner. The longer you keep it on the heat the thicker the sauce will get.

All I've ever done for my Macaroni Cheese and her Cauliflower Cheese, is chuck milk and grated cheese in a pan, careful not to boil too much (avoid separating the milk). Then add a teaspoon or so of cornstarch to a little milk, mix.
And dump in the pan, stirring while it thickens.

Although I do much more than that with herbs and spices to make it interesting. Even the packet stuff doesn't do that though.

I found 2 recipes for cheese sauce..hope one of these will help.

1st one is from the Campbell's quick and easy Recipe book... and is super simple... one 10oz. can of Campbell's condensed cheddar soup and 1/3 cup of milk..combine and cook over low heat, stirring often. Serve over hot vegetables.


2nd. one is from a chip and dip lovers book and is Broccoli cheese dip. Ingredients needed:
1 pkg. 10 oz frozen chopped broccoli cooked and drained.
3 Tbsp. butter or margarine
1/3 cup onion chopped
3/4 med. cheddar cheese, grated
1 can 10 1/2 ounce cream of mushroom soup
1 8-ounce can of mushrooms sliced.

cook broccoli set aside, melt butter in a medium skillet, add oiom amd saute until limp. add cheese, soup and mushrooms. Stir in broccoli. Mix well and simmer slowly until heated. Do not allow to come to a boil as the sheese will become ropy. makes about 4 1/2 cups. when cooking fresh broccoli, peel the stems to cook in the sme time as the flowerettes.

Since you said you're having tea, I assume you're English. I don't know how to convert measurements from english to metric, but if you can, this cheese sauce is the best! This is the one I use for my macaroni and cheese.

2 cups hot milk
3 tablespoons butter
3 tablespoons all-purpose flour
salt and pepper
1 to 1.5 cups shredded sharp cheddar cheese (depending on how cheesy you want it)

In large pot, melt the butter over medium low heat and add flour. Cook, stirring constantly, for 3 - 4 minutes. (Flour must foam in order to cook the raw flour taste out. Do NOT let your flour burn.).

Add salt and pepper to taste and mix well. Raise heat to medium high and gradually add in hot milk. Bring to a hard simmer, and cook and stir constantly for 3 - 5 minutes, until mixture thickens. Remove from heat and stir in the shredded cheese until melted.

i have the best one!
for veggies, lightly steam them first to get the water out (about 3 mins).
1. heat a large pot to low temp.
2. throw in 3 tablespoons of butter and melt.
3. add 3 tablespoons of plain flour, use whisk and mix together till well blended.
4. keep heat on low and cook flour for about 10 - 15 mins. (should be smooth when cooked, use whisk often.) if it's lumpy, add a little more butter till smooth.
5. keeping heat low, GRADUALLY add milk, keep whisking rapidly as you add so it doesn't get clumpy. it will keep getting thicker so add milk according to how thick or thin you want it.
6. when it's all mixed, gradually add some grated cheese and a few pinches of salt.
7. whisk regularly till cheese is melted and the sauce is smooth.
8. turning heat up will thicken it more so go as thick as you want.
9. turn off heat, throw in veggies, mix and serve.
delicious!!!! (use this sauce in lasagne too).

1/8 teaspoon ground black or white pepper
1 1/2 cups milk
1 cup grated Cheddar or smoky flavor Cheddar cheese

Melt butter; remove from heat. Stir in flour and seasonings. Gradually add milk, stirring until well mixed. Cook over low heat, stirring constantly, until thickened and smooth. Cook for 5 minutes longer; add cheese. Stir until smooth and well blended. Serve with pasta or vegetables.

Melt Velveeta cheese in milk to make cheese sauce. My family loves it on broccoli.

white sauce is made with flour ,butter and milk and all you do is add cheese to make it cheese sauce.
melt butter add flour and slowly add milk then as it thickens you add cheese
