Thai Hot and Sour Seafood Soup
6 servings 1 hour 25 min prep
1/2 lb small fresh shrimp, shelled and deveined (shells reserved)
1/2 lb scallops
2 tablespoons fish sauce
1 teaspoon salt
4 kaffir lime leaf
3 lemongrass, stalks cut into 1 inch pieces
2 quarts chicken stock
2 green onions, sliced julienne
6 shiitake mushrooms, sliced
2 green serrano chilies, seeded and chopped
1 red serrano chilie, seeded and slivered
3 tablespoons fresh cilantro, chopped
1 tablespoon lime zest
3/4 cup lime juice
Combine shrimp shells with stock, Green chiles, salt, lime, zest, lime leaves and lemongrass stalks in heavy non-aluminum pot.
Bring to a boil, reduce heat, cover and simmer for 20 minutes.
Strain.
Return liquid to pot and place over medium-high heat and bring to a boil.
Add shrimp and scallops and cook for 1 minute.
Stir in fish sauce and lime juice.
Add chopped cilantro, slivered red chili, shiitake slices, and green onions.
Stir and ladle into individual bowls.
Thai Fried Rice - Kao Pad (This uses ketchup instead of tomatoes)(instead of soy sauce)

4 tablespoons vegetable oil
2 eggs, lightly beaten
1 onion, finely chopped
1 1/2 teaspoons minced garlic
1 lb boneless pork loin, cut into julienne strips
1/2 lb shrimp, cleaned and deveined
1 (6 1/2 ounce) can lump crabmeat, flaked
1/2 teaspoon salt
1 teaspoon black pepper
2 tablespoons fish sauce
4 Thai red chili peppers, minced
2 tablespoons ketchup
4 cups cold cooked rice
1/2 cup chopped green onions
1/4 cup chopped fresh cilantro
Heat 2 tbsp.oil in wok and stir-fry the eggs, scrambling them.
Remove from wok and set aside.
In same wok, heat remaining oil and fry onion and garlic until tender; add pork, salt, pepper, fish sauce, chilies, and ketchup.
Stir-fry for 2-4 minutes, or until pork looks done.
Add shrimp and crab and continue stir-frying for another 3 minutes; add egg and rice.
Cook, stirring well, for another 2 minutes; fold in green onion and cilantro just before serving.

The problem is not the recipe - google it, there are plenty.
The problem is finding all the right ingredients.
If you live in a big city it should be ok, you will be able to get the lemon grass, the fish sauce etc...
Unfortunately though, with out things like that, it is just not going to taste that authentic. Try looking for oriental (or specifically Thai) food stores close to you.
