In order to assess good vision, doctors check:

o Visual Acuity (cranial nerve II) - use a Snellen Chart
o Visual Fields (cranial nerve II)
o Pupillary Reflexes (cranial nerves II, III)
o Extraocular movements - movements of the eye - whether the patient has double vision
o Check for nystagmus

Most general doctors should be able to do the above tests.

Then with additional apparatus they can
o Examine the fundus of the eye (look at the retina) - using direct fundoscopy, or the ophthalmologists will use a special lens for indirect fundoscopy
o Examine the cornea of the eye and its surroundings - using a slit lamp microscope
o Check extra-ocular pressure - either using a tonopen or an applanation tonometer

Most doctors SHOULD be able to do direct fundoscopy, but many doctors are not familiar with using a slit lamp microscope or checking intraocular pressure.

Doctors don't routinely check for oculovestibular reflex, saccades or colour vision. Ophthalmologists will usually check colour vision if there is a suspicion of colour blindness. The first two are something done in a more neurological context.

The vital signs of the eye are as follows
Visual function( Visual acuity and color vision)
corneal sensation
tonometry
pupil function
motility of the eye

I take it you mean physiological findings on a gross physical examination.
Add:
extraocular muscle motor functions.
oculovestibular reflexes
saccades

Flickering like their looking around the room really fast, Intraocular pressure as you said but that's all i can think of

I guess is the expansion and contraction of the pupil?
